We're having one of my favorite comfort foods... sloppy joes. Side will be a veggie bake with potatoes, zucchini, roasted red peppers, etc.

Tomorrow night will be cornbread twists with Pumpkin Chili... I just mentioned that recipe to someone here recently... was that you, @bobcat ?
Yes, it was me. I copied the recipe. It was made with turkey as I recall.

It's Peruvian style fried rice, plenty of Asian influence in Peru.

Here's the "secret" Peruvian sauce for the roast chicken and a lot of other things:

In a blender or food processor.

1 bunch of cilantro(leaves and stems), ~3/4 cup mayo, 1 or 2 jalapeño, cored and seeded, 1 serrano, cored and seeded(for a spicer version), couple basil leaves(if available), couple cloves peeled garlic, s+p, and milk to thin your desired consistency.

Blend till smooth, add milk as necessary.

It's the time of year to make room in the big freezer and reorganize, so we're working our way through bits and bobs that've made a home there over the past few months.

Baby Ducks (toddler grandson) loves anything with tomato sauce on it. Leftover pizza and a little baked ziti for lunch today along with some veggies for DH & me. BD is boycotting veggies these days. He'll come around... they always do.
 
If all goes well, I'll make a batch of my very kicked-up version of the "Jennifer Aniston Salad" later this morning. The base this time will be the brown rice I stumbled over in the freezer yesterday. Was planning to make it with quinoa, but since the brown rice is already done and I'm trying to make freezer space...
 
I haven't had much of an appetite since hubby passed away on Oct. 13th. It's been hard to find anything that appeals to me.

However, tomorrow (Saturday), a friend of my husband's and his daughter are coming to pick up his trap gun and all his shooting supplies, so I'm making a pot of chili and some corn bread. I'm hoping they will stay for lunch.

I can only imagine how difficult this past month has been for you, Colleen. I hope they stay to visit for a while tomorrow. 🤗

Did that, plus made some hummus, baked some potatoes and cleaned up the kitchen. DW is running and I'm about to settle down with a book. Life is good!
