What are you cooking or baking today?

Just made Chicken Suizas Casserole topped it with more sour cream & diced green onions. Instead of rolling tortillas up like enchiladas, you just cut or tear them up & mix everything together & top it with a lot of cheese. This always make more than we can eat. I need to start cutting this recipe in half.
 
I had a little fish boil. Pot of water with 2 tablespoons salt, chopped onion, and one or two bay leaves. Bring to a boil. Add fish filets and boil for 3 minutes. Since it was a “little boil”, I used little panfish I caught today. Serve with lemon and butter. This works great with pike as well.
 
A friend recommended this soup as being good for recovering from an illness. Lots of antioxidants, perhaps. Either way, it looked interesting so I made it yesterday. Very tasty. Made it according to the recipe except I skipped the wine, salt and chives, and only put in about half the ginger specified. (1/2 a cup of chopped fresh ginger is A LOT of ginger.)

Instead of using an immersion blender, next time I'll probably let it cool a bit then smooth it in the food processor or Vitamix.

Hubby made shirred eggs this morning for breakfast. Later we are going to have a deer roast with a rosemary herb rub for dinner.

Late last night I got hungry for cookies so I made two batches of chocolate chip, one with white chocolate & the other with dark. I used my Maker's Mark soaked pecan (leftover from Christmas) in them. After they cooled, the only bourbon flavor was in the pecans. This morning though after they had a chance to blend overnight, the bourbon flavor came out. Not strong at all.
