What are you cooking or baking today?

I found this recipe for bread that you don't have to knead...peasant bread. Kneading causes pain in my back that lasts for hours, so I haven't made bread in years except for on Christmas. But I made this one yesterday, and I sprinkled the top with poppy seeds toward the end of the second rise. It turned out really good!

So I'm making a loaf today, too. It's proving right now. After it comes out of the oven I'm gonna take it to my daughter-in-law. She had to have her cat put to sleep yesterday and she's feeling really down. She's gonna give me some cases of cat food and boxes of treats, which I'll def use, but it's kind of sad, right? So I'm thinking the bread will make it a sort of pleasant exchange.

@Murrmurr , I am no baker! I'm not even supposed to eat white bread.

I discovered the no-knead bread procedure at least 5 years ago on a PBS cooking show. It is fabulous! Only made it a few times cuz it's really delicious and I just couldn't deny myself.

This type was called "English Muffin Bread" and when you toast it, that's what it tastes like.

I found it just the other day on a YouTube channel called The Hillbilly Kitchen, and I remember my mom used to make it when she was in a rush.

I'm gonna add a little lemon juice next time, with the poppy seeds sprinkled on top. That should be good. It'd be good sprinkled with sesame seeds, too. And I'm thinking a tsp of honey instead of the sugar, and then sprinkled with oats on top.

And, yeah, it totally has an English Muffin vibe.

I've found that The Hillbilly Kitchen back in the winter months & made her meatloaf recipe. We really like it.

It's funny you mentioned her bread, because I copied down the recipe last week & was waiting for the weather to cool off a little to make it.

@RadishRose the English muffin bread sounds good too.
 
Today I made Maid Rite sandwiches. They are like sloppy joes without the sauce seasoned with salt, pepper, powdered mustard, bit of sugar & beer. You top them with pickle, onion, mustard & cheese.

I love these sandwiches, but I can only get them when we visit our friends until I found a recipe on Pinterest posted by a lady who said she had worked there. I had to make them & they were the same.

It's just a hole-in-the-wall sandwich shop with a small menu. Maid-Rite Sandwich Shoppe

@Jules, here you go:

Maid Rites - Greenville style (from Pinterest)

2 pound ground beef
1 cup beer (pilsner-style or Miller Lite)
2 Tbsp. sugar, white or brown to your taste (I leave this out)
2 tsp. dry mustard powder
1/2 tsp. white pepper, to taste (use black pepper if you don't have white)

Put beef in a skillet & add just enough water so you can simmer the meat. While the meat simmers, break it apart as it cooks. Don't brown the meat. I watch the water & add more if I need to while it's cooking. Drain off the extra grease & any extra water if you added to much.

Add the beer, sugar, mustard powder and pepper. Simmer for 15 minutes. The beer will cook down. Add salt to taste.

Serve with chopped sweet onions, dill pickles and yellow mustard on steamed buns. Sliced cheese is optional. Potato chips are good for picking up the meat that falls out of the sandwich.

NOTE: I can find 8-ounce pony bottles of Miller Lite at the local IGA. If I only have a 16-ounce bottle, I'll use the extra beer in place of the water to simmer the meat.
 
@Lilac, That cake has a million delicious calories in it. What a treat.

I actually have all the ingredients to make this. I noticed the optional use of red food colouring. A substitute is pomegranate syrup. I bought some to make pink icing for cookies, neither of which ever got made.
 
@Jules, I noticed that the recipe they have on line that I posted called for 4 layers instead of the original 3. I don't know what other updates they may have done since the original recipe, so here is the recipe I use. Ate too much cake today, but it did taste so good. Also, the berries gave it a nice pink color on its own without coloring. Just as a side note, the icing is very soft but it's not to be missed on the cake. It's like icing with whipped cream. It will set up a little more once it's on the cake & in the fridge.
