What are you cooking or baking today?

Good grief. I make a cream cheese/walnut/garlic spread for stuffing celery. Usually it’s better on the second or third day. It tasted bland, I added more garlic powder on the second day and more the next day. Still bland. Possibly because I’d opened the powder in 2018. Good thing I write on opening dates; it would be better if I read them.

It’s still cheaper for me to get my spices at Costco. I’ll share some of the new batch with a friend or two.
 

For brunch today I had homemade, from scratch, baked beans with bacon, macaroni with cheddar cheese and potato salad with gourmet dill dressing. Note- was larger portion than I usually have.

Note: Normally I add dill to my potato salad but Bicks has a gourmet dill dressing that really livens up the potato salad.

There is an easier way to make apple pie. Don't peel the apples. My stepdaughter does not peel the apples in her delicious pies, and I did not notice it with the first pie she made. I was set up to begin peeling apples for her next couple of pies, when she stopped me. I was astonished, especially since I rarely make apple pies because I greatly dislike peeling apples. I had decided to attend to this loathsome task simply because I love her, and I am capable of doing it.

I have graduated to the next step: Asking her to make apple pies about twice a month. She even makes her own crusts -- another task I dislike, but she enjoys it. Meanwhile, our fridge is well-stocked with refrigerated pie crusts in case I decide to make a quiche or a pie.
 
@PeppermintPatty Last year you and someone else mentioned the type of premade burgers you really like from Costco. Do you remember what type they were. Regular, Prime, Angus?
The Costco burgers are made by Kirkland, so are their own name brand. Kirkland Signature Frozen Lean Sirloin Ground Beef Patties are made from 100% sirloin beef and are 15% lean. This 2.72 kg package contains 18 Homestyle patties of 151 g (5.3 oz) each.

They are super yummy.
 
Toddler grandson was asking for pizza when he was with us last weekend, but my freezer stash was down to lemon artichoke w/provolone and no tomato sauce. Delicious, but that very picky two year old would have for sure turned his nose up.

So I quickly defrosted some ciabattas and sliced the tops in half horizontally, making 3 pizza bases. Whipped up a sauce and defrosted some mozzarella. Baked them in the toaster oven and voila, lunch was served.

When he was here yesterday he started asking for pizza again, so I repeated the process, but this time cooked them in a lightly covered frying pan, which was faster and added much less heat to the house.

Sometimes good enough is good enough. Especially on a 103° day.
 
I threw about 5 frozen chicken thighs into the pressure cooker with chicken broth, a 28 oz can crushed Italian tomatoes, a few bay leaves, s&p, and a bit of smoked paprika.

I will use up last nights quinoa and veggies with some of the chicken and sauce for supper. Doggy will have some rinsed off chicken.

Can eat more chicken tomorrow w/ a *small* potato salad and baked asparagus.

My DGS might drive down on Sat, with the baby. DGDil working. Since he loves meatloaf (not even kidding) I may pick up some ground beef tomorrow and make one. Have frozen shoe string French fries and frozen broccoli I can bake in the oven, too.

I do like sour dill pickle relish (not the sweet kind) in potato salad sometimes.
 
Made a large bowl of Greek Salad. Early(ish) this morning I walked to the grocery store for green peppers. None available. Of course, I bought other stuff and now still need to make a trip to another store. This is how I spend too much money; I can’t walk out with just one thing.
 
Made a no-bake Cherry Cheesecake for my friend’s birthday tomorrow. We’re going for lunch and coming back here to celebrate.

Yesterday I made Broccoli salad. It’s a monster sized bowl. Just as I was mixing the ingredients together, I realized I should have made half the recipe. I added that comment to my notes.

It’s finally corn on the cob season. We’re having that every day.
