What are you cooking or baking today?

A favorite dish my mom used to make is what she called Portuguese Chicken; lightly fried chicken arranged in her electric frying pan, each piece topped with a pat of butter, 1 or 2 rings of green and yellow bell peppers and onion, then sprinkled with finely chopped garlic and spices, and then drowned in tomato sauce. She'd bring that up to the boiling point, then immediately turn the heat way down and let it all simmer for about half an hour or so. When it was done, we poured the sauce over steamed rice.

So freaking yummy. And it would probly work ok with skinless chicken, but maybe I should skip the lightly fried part....maybe boil it for a little while instead.
Do yourself a favor and don't boil the chicken. Simply add the thighs (s+p first) to the tomato sauce; they will cook in less than 15 minutes.
 

I made sheet pan tikka masala w turkey thighs, cauliflower, red peppers, and onions, Served w brown rice.

1 tsp Kashmiri chile powder
1 1/2 tsp ground cumin
1 tsp cumin seed, whole
1 1/2 tsp garam masala
1 tsp turmeric
1/2 tsp ground ginger
1/2 tsp granulated garlic
1 1/2 tsp salt

and peanut oil to coat, If you want to add potatoes instead of rice parboil prior to mixing w the oil and spices

It's a dumbed down version of this recipe

Ok, that sounds smart. Especially since I unwrapped the chicken thighs today and saw they're butterflied! So they're not only skinless and fatless, they're also thin.

So I'll make mom's Portuguese Chicken tomorrow if it's a good day...meaning, if my legs let me stand upright long enough. I'm thinking 20-30 minutes on my feet, cuz I can sit and cut the vegs at the table.

Meesh is talking about getting someone to adapt the kitchen for wheelchair accessibility, but I'm not giving up on the physical therapy yet (much as I'd like to). I've gotten myself out of a wheelchair twice before. Last time was almost 20yrs ago, and it was a helluva lot of work, but I like to think I've still got it in me.

I'm hoping for the best wrt your therapy and getting the kitchen adapted sounds like it will make your life much easier.

Boneless thighs aren't butterflied in my experience, just unraveled from the bone, rolled back up, and packaged. There isn't enough $ or labor to warrant butterflying every piece.

I'm not anxious to spend money on that unless I really have to.

All I really need is a platform that's about the same width as the stove and sink and maybe a couple feet high, with a short ramp on each end. Or just one end. A portable one, so I can move it to where I need it.

I talked to my son about this. He's an engineer and welder. He's pretty sure he can design and make one that's light enough for me to move, like from the stove to the sink, or whatever. (if I can't get my legs back, that is)

Depending on the space stove/sink one wide bridge may work. Been there!

I put a mostly frozen rotisserie chicken in the pressure cooker with the usual friends; the celery, the carrot the onion, a smashed piece of garlic, bay leaves, poultry seasoning, chicken broth and half a 14 ounce can of minced tomatoes. It smells really good. Oh, I threw 2 cloves in there too along with a few peppercorns. I hope it tastes as good as it smells.

When it is just you and no visitors do you cook as elaborate ?
 
Chocolate protein pudding (made with cottage cheese and cocoa powder). Cherry Fluff (cream cheese/strawberry jello/heavy whipping cream), Keto bread (cream cheese and egg) made on my Dash griddler. Strawberry Jello. Two different types of “fat Bombs”(one being peanut butter and the other chocolate) I make them bite size and I keep them in the freezer. Last week was main course meals.
