Coconut Cream Pie is my favorite, but it must take some skill to make because I rarely see it on the dessert menu.
Actually it’s very easy. Just check out your Better Homes and Gardens Cookbook. It starts with a basic cream pie recipe. Probably because it’s so easy, the restaurants want to offer something more exotic sounding.
 

OMG! @hollydolly It looks delicious, but how can anybody eat so much food all at the same time? A baked potato is a whole meal for me!

Wait. Back in the day when I was giant sized, my colleagues and I would step across the road from the office to our fave Mexican restaurant for lunch. I'd order my fave meal (chile con queso steak with rice and black beans), polish it off and order again. Dessert of sopapillas was always brought to the table in a basket...two per person and there were four of us...everybody was full so I'd fill them with honey and eat them. Waste not want not. Hm. Also "waist" not...

200+ lbs later...I was long overdue for some serious dieting :rolleyes:
There's no baked potato on the plate ..lol..there's roast potatoes, Broccoli cheese, Yorkshire pudding, thinly sliced Roast beef, & Caramelised Carrots... . It's not a huge dinner, I can't eat a massive lunch, and once I have a dinner like this, I can't eat dessert..cuz I'm stuffed. Believe me people eat much more than this.. they often have mashed potato along with the roast.. and 2 YP's rather than one.. and 3 veggies are standard...
 
Went out and cut off some tomato suckers to try to root. Ended up cutting down the basil and will try to root it also. It has been too hot and dry for much of anything this summer and it looks like it is going to stay this way for a while so I may have time for a second crop,
 
Sounds like a busy day or is this a normal one? I would be ready for bed, early. But, I normally am up by late 4 a.m.
Nope, just a crazy Sunday. We were supposed to go out Saturday but it rained. Yuck! Therefore, we worked indoors. Today was cloudy until round 1pm then it got really warm and sunny, so, we took off for shopping as Monday, daughter has Avon deliveries and I'm waiting for pick up and delivery from British Heart Foundation.

We naturally prefer to keep busy. The days go faster that way. Although we dislike waiting on others who promises to do something in a timely fashion, but in the end they don't Argh! Sorry 🤣🤣🤣.

We used to be up till 4am quite a long time after hubby died. Nowadays, we nod off round 2am. Catching up on better zzzzsss now 👍

Och gosh, not at all. I've been making them since 1968 or thereabouts. I basically make a custard type filling. Cornflour (aka Cornstarch), the coconut cream 14 Oz can, top up with milk, add the eggs and just stir and stir (requires patience lol!). Then add desicated coconut.

Meanwhile, get someone to mix Graham Crackers (in USA) and tea biscuits (in UK) crust with melted butter. Pour Coconut custard in prepared crust, add fresh or toasted shredded coconut on top. Stick in oven and voilà!

Wait until cool at least 4 hours, otherwise you'll get a custard meltdown. Enjoy!

@hollydolly I was only using a baked potato for comparison. It would only take up a little bit of the plate but all of my belly!

BTW, did I mention that Sir is now among the bakery folks with covid? There are only three of us. Hope our cake decorator doesn't get it because she has 8-year-old twins. If this is the newest iteration, there are gonna be a lotta sick people at work because Sir is always out and about all over the store, often in the deli, spends a good bit of time in the offices upstairs. Oy.
 
@Jules If you can even imagine such heresy, just the other day I was reading about "stuff" we should all get rid of. On the list were cookbooks. Whaaat? Get rid of my cookbooks? Not. On. Your. Life.

And that recipe for coconut cream pie in BH&G cookbook. I have that and have used it! Small world.

I rarely give up cookbooks! That's what I have for if TSHTF!
I have Betty Crocker, Good Housekeeping, NY Times. Many old ones.
I only get rid of fad diet ones or the like.
 
@Jules Yup. Betty Crocker Picture Cookbook. I asked for it for Christmas from Whatsisname, The Father of My Children, the first year we were married.

I was used to cooking for a whole herd of people and not using a recipe. You know...10 lbs of potatoes, two dozen eggs, 16-18 pork chops, a couple of pounds of bacon, six cups of rolled oats/12 cups water...like that! I figured if I could read, I could cook and bake. Betty Crocker was my best teacher. It would be sacrilege to abandon her after more than 60 years when she served me so well.

I got the BH&G cookbook with S&H Green Stamps and still have the cookbooks MIL and my own mother used in home ec classes in high school.

Thank you. It's unlikely I will make it, as I really don't see me eating a whole cream pie by myself, but it's fun to think about though.

Experts always make everything sound so easy, but it's like me telling you it's not that difficult to replace a ceiling fan. It isn't if you know what you're doing. But I appreciate the confidence you have with this amateur.
 
Last time out in the sanctuary tonight and the boy dog, Mason, and I saw a baby toad.
Was just doing toad stuff ...

I did some financial stuff and trimmed my hair after I washed it. I had phone conversations with my sister and a good friend, played with Deja a bit and played WWF2. I also finished the series I've been binge watching...The Night Agent (Netflix). Thank you again @Old Salt
I trim my hair too. Haven't gotten a haircut since the Pandemic started,.I mean before that. Thinking of going to a salon though.

What are you binge watching now?
 
Yesterday, filled out online pet shelter application. Took me two hours! Of course, I had a lot to say. There will be a home Zoom visit. Such a big fuss! Never in my life had to pay for a cat before but oh well.
