What Did You Have on Your Last Sandwich?

Kipper Snacks on toast with mayo spread....

My last sandwich was a chopped Italian I made at home. I put salami, a little ham, provolone, shredded lettuce, tomato, red onion, and a few banana peppers on the cutting board. I add a spoon of mayo with a splash of Italian dressing, chop everything together, then pile it on a toasted hoagie roll. Every bite tastes the same and it is easy to eat.
If deli turkey ever tastes wet, I blot it with a paper towel first or I use oven-roasted slices from the counter. That helps a lot.
If anyone wants the step-by-step with photos and a simple dressing, I wrote it up here:

What did you have on your last sandwich?

Grated mature cheddar cheese, with sliced then chopped pickled beetroot. Made with my own fair hands. It's a classic!

UPDATE:
On brown bread with proper butter -- not that mamby pamby margarine stuff. I did consider putting some lettuce on it too. Then after a pause in thought, I thought, "Not a chance!"

Crumbly Lancashire cheese and silverskin pickled onions on soft this white bread.
I must admit, I am a fan of crumbly Lancashire cheese. The more crumbly the better. And especially with sliced silver skin picked onions, or any cocktail picked onion for that matter.

Nice when toasted too, with the cheese and pickle open directly under the grill
