I've always heard it referred to as "meat" but don't think school had anything to do with it.
So there must be a "clinical" name for it I guess ??

I think that is a US term.
The part of a nut that is inside the shell and can be eaten.

Most people refer to the nut as the edible part and the shell as the edible or inedible part encasing it. If someone asked me if I wanted some walnut kernels I'd think they were, um, nuts.

Nut "meat" is commonly used in the US, as @Naturally said.

i have an allergy to nuts which really complicates my life. have to read every ingredient list on every product i purchase. things i bought last year have new and improved ingredient lists and have to include a clause that says something like manufactured in the same place that processes nuts, so now there is a contamination factor. i eat plain hershey bars but the Halloween package of mini hershey bars included the nut clause. those were given away first. life is cruel.
