What's for dinner ( or lunch )

Beef stew, crackers, a few pickled beets, ice tea and a bowl of raspberry swirl ice cream.
Well that sounds good except for the beets. I will admit this a childhood thing, time I tried them again.
 

Blessed…have always loved beets fixed any style. I had a garden when I was young and fresh veggies were delicious. I go through a jar of pickled beets a week. They wake up the old taste buds.
Don't laugh, I was in charge of making my stepdad's lunch. He always had me put pickled beets on his tuna fish sandwich, just looked gross. The bread would always go purple and looked mushy but he loved it. I guess we all have our own taste. My Mom lived with me for a couple of years. She loved pickled beets, I would buy them but I also bought canned beets. When she went through a jar of expensive pickled beets I would add a can of beets to the jar. It must have worked, she never said anything about the taste or her beets. Now I save jars of pickle juice, slice or cut a cucumber in wedges and pack in the same jar. They taste good and are crisp as an expensive jar of pickles. I eat a lot of pickles!!
 
I went ahead and made the cornbread while the lentil stew was simmering. My stove, oven and home heating are natural gas. This year natural gas prices have more than doubled, so I decided to try putting the cornbread in my electric toaster oven instead of turning on the oven.

Not only does the toaster oven come to temperature in less than five minutes, the cornbread was perfectly baked in only 15 minutes instead of the typical 25.

I'll look at using the t.o. for more small baking projects after this experience.

So..your Gas prices have doubled too .. :( sorry to hear that.. Ours are cripplingly expensive now, so like you I do as much as I can to use as little power as possible when cooking or heating ( gas central heating)
 
I just had Fish fingers (sticks) in tempura Batter... I wasn't all that hungry so I just made a couple, and ate them on their own... and had 2 Orange dark chocolate Profiteroles with my cuppa tea.

@Jules , I was going to try those Mac & Cheese Croquettes that I bought a while back, if you remember.. but as I wasn't hungry I thought they might be a little bit too heavy.. but I haven't forgotten that I have to report on them when I do.. (y)

We're fortunate to live in So Cal, so while our gas heating costs have gone up dramatically, the amount of heat we need is far less than those in more northerly climes. Even on our coldest nights temps rarely dip into the 30s, and daytime highs tend to be in the mid 60s.

With two zone heat and AC, we only run the zone we're using (common areas or master bedroom - vents for other bedrooms are closed) and keep the thermostat at 65 in winter, 77 (or higher) in summer.
 
I made a maple baked pork loin roast last night. It was easy, tasted great, and I got the recipe from allrecipes.com. The sauce is maple syrup, catsup, and garlic. Sounds horrible to me, but it is very good. It uses 3/4 c of syrup, or 1.5 c if doubled.

I bought a 7 lb pork loin, so I had to cut it in half to fit the pans. The recipe was for a 4 lb roast, so I doubled it. Served it with baked potatoes and (originally frozen) mixed veg.
 
I was going to have Ham Hocks for dinner, then I remembered I'd put a portion of Mince beef, potatoes and veg dinner I batched cook and froze a couple of weeks ago, into the fridge to defrost last night, so altho' it wasn't fully defrosted I heated it up thoroughly in the Micro and had that for dinner . I'll keep the Ham hocks for another day
 
I had Ham hock tonight.. only one, and I didn't add the apple caramel sauce.. , but I've put the other Ham hock in the fridge so I can make bacon , Potato and lentil soup tomorrow. ...had the hock with light fluffy potato fritters.. they come out so much lighter when cooked in the Airfryer .

An hour or so later I made custard from scratch, and poured it over hot steaming Chocolate sponge pudding.. :p
 
Tonight after being out all day I wasn't in the mood for more than something quick to eat.. so I just had a bacon roll... and then about an hour later had the rest of the hot choc pudding and custard from last night...

In the meantime I cooked up a whole load of veggies into a Soup.. added chicken leg flaked which I;d just cooked in the Airfryer tonight .. and the other ham hock from last night.. I've transferred the soup into 4 Containers to cool, and then I'll freeze them... That gives me 4 rib sticking dinners for next week..

Chap is skipping dinner today as he is out with the boys (watch out ladies, the fellas are out on the razz :eek:) I plan on having hummus, super salad, a little pasta tossed in garlic and olive oil, focaccia bread and olives and any other delicacies I spot at the shops today - a buffet for one ;)
 
Tonight will be a new recipe I found for lasagna... it's kind of like a veggie lasagna but also has meat. It uses zucchini and fresh spinach, ricotta, etc. I usually have garlic bread with this kind of meal, but I'm trying to lower our carbs, so I'm going to serve Garlic and White Wine sauteed mushrooms with it... it's Bird's Eye but low calorie and relatively low sodium for something processed, so we're giving it a try.
