What's for dinner ( or lunch )

Being by myself I have a lot of latitude in meal options and can be as lazy or experimental as I like.

For reasons not worth going into, I have a quantity of bulk kippered beef strips in my freezer. I've often used kitchen shears to kibble a few strips and stew them in a chili. But now I have a new use.

I kibble them with shears and then use a coffee grinder to render them fine. Since this material is a bit moister than beef jerky the result is not a powder but more like fine bacon bits you can buy in the store. I mix this with tomato sauce and some flavorings like onion powder, red pepper flakes, lemon pepper, or maybe oregano and garlic powder. Cook it up a little in the microwave. Let it sit until cool then move it to the 'fridge for a few hours or overnight to mellow and hydrate.

Works great as a soup base, or even spread on toast cold or warmed.
 

Made a little flatbread pizza. Now I have bacon in the oven for breakfast ove the next few days. Then will bake a couple of chicken breasts for recipes in the next few days.....

Do you ever try to tweak a mess or do you toss it and do something else?

Yes, I baked chicken breasts, made some stuffing and reheated leftover winter squash instead of broccoli.

Just now I had chicken salad from yesterday's chick leftovers and some Halvah for dessert.

Goof luck with your diet chica. I know it's so hard.

:) Never throw away food, dilettante, it's bad luck. Maybe you could
1) mash a small baked potato in a skillet over low flame,
2) cover it with a little bit of your chili,
3) cover that with slices of cheese,
4) cover that with a lid, until melted.
Freeze the rest of your chili, and repeat on another day.

hahaha.. it's not bad luck...otherwise every grocery shop in the world ..every greengrocer.. every fast food restaurant, every stall holder, every butcher, & baker, would be out of business.. :D

:) Maybe things are different in Europe, hollydolly, I wouldn't know about that but, for me, to waste food is an invitation for disaster which I would not wish on my worst enemy. Bad Luck! You don't want it!

Well wasting food is not good, but so is wasting time, effort, and more good food trying to avoid waste.

For example bought some swordfish that was absolutely horrible. It wasn't spoilt, did not smell off, but it didn't cook correctly and neither the taste or texture was acceptable. Being a life long fisher of both fresh and salt I am fussy. And truthfully we don't eat leftovers for dinner, lunch yes, but not dinner.

My buddy (of Scottish decent) whom was staying w us wanted to try to salvage it for another meal. I told him point blank neither my wife nor me would be eating whatever he cobbled together and please feed the fish to the coyotes. Thankfully he got the msg, coyotes and magpies were happy though!
