What's for dinner ( or lunch )

Used the last of the filled Yorkshire puddings we bought just after Christmas. Not something we usually buy but, they were vastly reduced, well within date and fine to freeze. As they were filled with roast beef, creme fraiche and horseradish we just needed to add vegetables and gravy. Very nice :)
 
Lunch will be some cottage cheese and for dessert some greek yogurt and sugar free chocolate

Supper or Dinner will be a grill cheese with hot pepper rings and for dessert some orange slices
 
Gee,I am glad I caught up with this thread-so many good things to eat!

Your son's Navy bean soup sounds great! I have made what seemed to be Michael Jackson's last meal.

His cook told the press or someone that it was sort of a Tuscany style soup with Navy beans and probably some garlic and flat fresh parsley, and I always add some chicken stock. It was one of his favorite lunch meals.

But if you ever could, I would throw in a few Lobster tails and maybe some fresh clams, if you like them too or cook Whatever you like!

I see here that Smoked Salmon and cream cheese, rib steak, mushrooms, lamb, and chicken , many delicious things that are inspiring to me----

I am having a Rotisserie chicken from the T0Ps market, bought it yesterday and felt like eating it in the car, they are so good!
But today I am using Bob Evans Buttermilk mashed red potatoes, and cole slaw with it and heating it up in Sweet Baby Rays sauce! In the summer they have many types of barbeque sauce as well as plain rotisserie chickens , but I prefer the above sauce, like so many here do.

They are $7.99 each, but I am also freezing the legs and thighs for more meals, and also after today and tomorrow, I will still have enough left to make chicken salad or even chicken with biscuits and a chicken stock gravy would also be Great!

Speaking of clams- I really wanted to get some fresh clams for clams and linquini, but I do have canned claims and the fresh clams are expensive. I love seafood and fish. However it was better in NJ- fresh from the ocean every day at a big year round farmer's market. You could even get a large cooked crab for only a few bucks.
 
I made kale, beef & mushroom casserole.

1 pkg fresh mushrooms, cleaned
1 large bunch of kale, washed, stems removed and leaves torn in bite-sized pieces
6 slices of deli roast beef, shredded or cut in strips
a few Tbsps olive oil
seasonings

In a Dutch oven, cook mushrooms in oil until soft adding seasonings (I use some salt, ground black pepper, onion and garlic powder). Add kale. Cover and let kale wilt, stirring frequently. When kale is wilted, add prepared beef. Stir until all warmed through.
 
Cutting back, so I rarely have a lot to say here. But when I got up this morning I felt ravenous.

For breakfast I cooked 3 strips of bacon and scrambled 2 eggs. Put some warmed salsa over the eggs, and had two small pieces of rye toast with butter and strawberry jam. No juice, but I finished with some apple sauce and blueberries. Hot black coffee too, though fairly weak half-decaf.

Maybe I'll skip lunch, but it was satisfying.
