What's for dinner ( or lunch )

DD & I combine forces for a meal nearly every weekend. Yesterday I made cole slaw, seared some tofu, and assembled a can of Greek style canned eggplant, sun dried tomatoes in oil and jarred roasted red peppers.

She had sliced turkey and provolone (for her family; I don't eat those), olive tapenade, red pepper spread, fresh spinach and potato chips. Plus popped some popcorn for an appetizer. 😋

Between both of our panini presses plus her griddle, everyone assembled their sandwiches, fixed plates with their sides, and readied a yummy dinner in nothing flat.

Followed it with the autumn themed dessert of pumpkin spice coffee cake that tempted her at the grocery store.
