DD & I combine forces for a meal nearly every weekend. Yesterday I made cole slaw, seared some tofu, and assembled a can of Greek style canned eggplant, sun dried tomatoes in oil and jarred roasted red peppers.
She had sliced turkey and provolone (for her family; I don't eat those), olive tapenade, red pepper spread, fresh spinach and potato chips. Plus popped some popcorn for an appetizer.
Between both of our panini presses plus her griddle, everyone assembled their sandwiches, fixed plates with their sides, and readied a yummy dinner in nothing flat.
Followed it with the autumn themed dessert of pumpkin spice coffee cake that tempted her at the grocery store.

freezer, added a friends donation of great vegitable soup and

Had a big salad for lunch yesterday with a lot of greens and other salad veggies, seared tofu, tangerine segments, sliced strawberries, and homemade coleslaw that I stirred through to double as more veggies plus some dressing.

A Quiet American
Made cauliflower au gratin casserole with sharp cheddar cheese and an having it with some dal and corn. Everything is yellow but who cares.. it’s delish!

Last night, here in the hotel, we had microwave Mac and cheese, canned peaches and for dessert a bag of vending machine M and Ms.
