Whats For Dinner/Supper ?

Was out for a Doc appointment this morning at 07:00, so I stopped at one of my favorite healthy fresh food digs called "Snooze". I like them because they serve only fresh healthy food and give calorie counts for each dish - to ensure a reality check when ordering. I had my favorite dish there, which I get about every other week: one baked, then griddled sweet potato sliced lengthwise, open face, dressed with pickled onions and asparagus, red onion, & mushrooms, then topped with half an avocado, a poached egg and hemp seeds. They then drizzle a light Sriracha maple syrup over top. The pickled onions are so good, I want to learn to make them.

Splurged and had, on the side, just one "Strawberry Shortcake" pancake with fresh strawberries...a treat to die for. So delicious and light.

As all that food was nearly or right at 900 calories, for dinner tonight I had two cups of cherry tomatoes, sliced in half, plus a diced avocado and then drizzled with a lite balsamic glaze then a sprinkle of salt and pepper.
 
The spinach in the above post (#537) had a strange taste to it. A sort of chemical-y, bitter-ish taste. Dole pre-packaged, pre-washed; not organic, nor was it baby spinach, which is what I usually get. It was also kind of "chewy" after cooking. I will avoid this in the future.

Mature lettuce does have a tough vein in the leaf, maybe that's why it was chewy?
 
Cheese, cheese, wonderful cheese! I love the stuff! Any kind, doesn't matter. I never get the already shredded stuff, it has a drying agent added, doesn't seem to melt the same, and has a strange taste. It only takes a minute to grate.

My nephew was here with his parents a few years ago; he likes to cook. I forget what we made (tacos?) but it included cheese. He was surprised when I got out the cheese grater. After the meal, he said, "I won't use that pre-grated cheese again. This is much better."
 
What used to be called salisbury steak, actually a 94% lean burger patty with mushroom gravy (homemade). Sliced tomatoes with feta crumbles and a drizzle of blue cheese yogurt-based dressing, and whatever other veggie I can come up with. Maybe finish up the eggplant in the fridge?
