@Blessed, our main bakery in Louisville makes the croissants, flash freezes, ships them to the stores. All we do is thaw, proof, bake, package and...sell.
When there's time, I lay out the trays before I leave at noon and roll the racks into the cooler to put in the proofer first thing in the morning. They thaw nicely and doing that saves me time in the morning when time is something there's just not enough of. When they go into the proofer thawed, it takes about 45 minutes before they're ready for the oven. From frozen, it takes about 10 minutes to lay them out, then an hour in the proofer before they go into the oven.
AFAIK, nobody has ever asked to buy them frozen. They come 120 to a carton, and I would think that they could be sold by the carton. No idea how much they'd cost, though. I do know that we've sold other products frozen, but when we do, we have to sell by the carton.
