What are you cooking or baking today?

Today I cooked for Dog; a package of chicken hearts and gizzards, 3 fresh carrots all steamed, and put through the food processor with the water. Mixed with a handful of kibble. Oh, she is a happy dog. Made enough for about 3 meals, so I froze the remaining portions for another day.
My dog's appetite is greater than his energy level requires so twice a day he gets a little dog food, some brown rice, and a little chicken. Also any vegetables my grandson doesn't eat. Right now he's turning his nose up at broccoli despite loving it last week. Ozzie is happy to eat the baby's leftovers.
 
I've started making chaffles. You know, the keto version of waffles made with egg, almond flour, and mozzarella.
I had a bonus coupon at Christmas and got one of those mini waffle makers for $5.
I intend to make waffles too per request from DH.
They actually come out good but I can see why a four section regular size waffle maker would be more practical.
Anyway, it's mini, light blue, and adorable. What's not too love!
 
In my former home, I made chaffles with just egg and cheese. They turned out great! After moving here, I bought a waffle maker, but I didn't like the way the chaffles turned out. They seemed thin and hard. I think the waffle maker in the previous place was for "Belgian waffles."

Anyway, I gave the new waffle maker to a neighbor, and she was happy.
 
Three pounds of loose ground beef in the oven, with dried dill, paprika, onion powder, and garlic powder. Enough for several meals (fridge and freezer).

It's one of several easy peasy ground beef recipes I make regularly. The version with curry powder and peri peri sauce is my favorite.

No chopping, no mess, the glass pan is easy to clean. Not very exciting, but it gets the job done.

My son got me one of those for Christmas, and now I make chaffles every morning. It takes 2 minutes to cook each one, and as it's cooking, am preparing other stuff (coffee, etc). I've learned to time it. I can make 4 chaffles with two eggs and cheese and almond flour, etc and split it - I have two for breakfast and two for dinner. It's become my favorite staple!
 
@CallMeKate we make big batches & freeze them all the time. It works out well for quick meal. It's no more work for a single than a big batch. I used to buy single-use plastic deli containers, but the price more than doubled during the shortages. I found these reusable containers that I really like in 1-pint. I use 1-quarts for beef & chicken stock. I think they will pay for themselves.

Same here. When cooking or baking, I nearly always make plenty and stash some in the freezer. Same with rice, quinoa, or beans (especially garbanzos for hummus) in the instant pot.

I've accumulated loads of plastic containers of every imaginable size and shape. Some I purchased as containers, but many were filled with something like sour cream or deli items. They're so useful, as are freezer ziplocks.
 
Hubby is trying new recipe so we cut it in half to see if we like it first. It's called Tennessee Jambalaya that I found on the Lodge Cast Iron site. Uses Italian sausage, roast chicken & country ham with the usual jambalaya veggies. It was different & sounded good.

Update: It was ok, but it smelled better cooking. I don't think it will be made again.

Oh that sounds delicious, @Lilac ! I made Jambalaya just once that I recall... there are so many things I need to pull out the recipe for and make again... I've been so much into trying new things that the old favorites get lost in the shuffle.
 
My Fake Pizza.

Large, burrito sized flour tortilla, canned tomatoes buzzed smooth but only use enough to coat, 1 Italian sausage link, pulled apart or sliced, parm/romano and mozz. Heat in an oiled fry pan on stove top a few mins till bottom is browned, then stick it under a pre-heated broiler for 2 mins. A bit of char makes it taste right.

If it's too droopy, melt some cheese between 2 tortillas to stick together and proceed.

Good in a pinch.
