What are you cooking or baking today?

This past Saturday, I bought a 25# box of peaches from the same company (Indian River Direct) who delivery them from the Carolina-area orchards every year. Wednesday they were ripe enough for me to process & I found out they were were dry & mealy. I'm very unhappy with them, but I got enought to put a batch in the freeze-dryer. Today I took them out & am just as unsatisfied with them. I rehydrated them & they will are just as bad. I looked up what I can do with them & the only answer was to put them in pies or cobblers & add extra sugar.

I've bought peaches from this company for years & haven't ever had a bad batch. I sent an email to the company, but haven't heard back. I still have half a box after freezing drying the other half & throwing out about 6 of that total.

They aren't good enough for jam. I'm lucky that I had good peaches from last year for jam (lasts me 2 years) & freeze dried others which I still haven't used up.

These peaches looked nice in the box, but had very little fuzz on them. Has anyone else ended up with mealy peaches? If so, what did you do with them?

I'll try a pie or cobbler, but I don't see how they will be better tasting or have a much better texture. I think I'm through buying peaches this year for canning.
 

Last night I made a batch of my personal version of the "Jennifer Aniston Salad" that made the rounds a year or so ago (which she denies being sourced by her).

Such a great warm weather salad. I made it using quinoa this time around - sometimes use brown rice, sometimes a combo of the two, depending on my mood and what's handy.
Had a bigger crowd than expected for dinner because DD and fam stayed to eat. Broke out the griddle and served grilled cheese sandwiches and the above salad plus tortilla and potato chips. Popsicles for dessert. We ate poolside.

Rooted through the freezer to figure out what to serve the kids today and tonight (18 mo, and 8, 11 and 18 years old). Might do pasta with tomato sauce plus the (frozen) meatballs I made a few weeks ago and a green salad. Will take a survey after the gang arrives.

Still need to come up with something for the other meal. If all else fails, there's always take-out!
 
I had a little beer left 😁. My local IGA carries little bottles of beer that are only 8 ounces. I have them stashed away just for cooking. They work out well.
Oh lucky you to have a IGA. My favourite beer was "Bière d'épinette" aka "Spruce Beer". Gosh I miss that soft drink...

Oh the days of making preserves with three baskets of peaches or pick-your-own strawberries. Gosh the amount of toast we hate during those times lol! The breads were always scared as well as the butter...
 
So, dinner was "Cheeseburger Homemade Hamburger Helper". We got two bowls each with buttered bread. Yummy!
That sounds good, @Supernatural . (y) I have a recipe for it somewhere and we enjoyed it when I made it. Have to dig for the recipe and make it again. I like those kinds of recipes because I'm able to control the amount of sodium and other ingredients and that's a big deal around here!

I use about 1/4 bag (of 500grams) of minced (ground) beef. Boiled in with the fusili noodles (about 4 handful, I've big hands lol). Once cooked Al denté, I drain the water and broth, add one can of cream of tomato soup, one medium diced onions, two handfuls of grated cheddar, a tablespoon of Herbes de Provence, three turns of salt grinder, pepper to taste and a teaspoon of sunflower oil. Heat up till hot. Enjoy!
 
Frozen coleslaw.
DH brought a nice cabbage in. Unfortunately, I broke my wrist and it went bad before we realized it. 😕
Luckily, a neighbor brought us a big one so that's what I'm making. I can cut things up now.
You can freeze it in small containers to use throughout the year.
What kind of dressing and other things do you put in prior to freezing?
 
You know how it goes... You decide to go out for your last week of the month's groceries. You've got everything covered, right...???

Huh, nope no nay never... You come out with a crackerjack load of wonderful rump steaks at a fantastic low prices... You're looking forward to cooking your steak dinner on Sunday night coming. BUT the horror of discovering that you've got 3 bags of chips in the freezer BUT absolutely none whatsoever of the best summer accompaniment, Baked Potatoes.

Oh bummer!

As we're planning a sports day tomorrow aka Saturday, after our ball whacking session aka tennis, we can choose to get frozen baked potatoes or save money and just have Chips with our steaks and veggies on Sunday night 😂😂😂.

Lunch today is usual, sandwiches and soup.

Dinner for tonight is planned as fish something 👍
 
I think tonight pizza but I have no dough in the freezer. Have to get some made, then it will be hamburger, green bell pepper and onion with extra cheese.
Cheeseburger Pizza? Yes, now you're preaching to the ultimate comfort food my dear @Blessed.

If no dough, try to find round Pita breads at your shop, best replacement crust when in emergency!
 
Yep, I love me some pizza, I always make me my own crust, just takes a few minutes in the mixer.
Then I just divide it into small portions and freeze. Now that I live alone it is the best way to do it.
