Reflections of My Life

hope sonny is alright. enjoy your day kat!
He called me! He is sore and for some reason keeps sneezing.........and then he yells in pain! I told him he must be allergic to hospitals. He is staying the night there but I am sure I will hear from him again unless he does go to sleep. Poor nurses.........he likes to tease them. :)
 

Busy, busy day today for me. I did my laundry right after my shower. While it was in the machines I had breakfast.

Then came back and completely tore Rabbit's cage apart. Cleaned it real good with vinegar and dawn. Put new boxes in and new plastic mats, Then the doggie pads go in and on top of that I put the newspapers that are folded up. Top it off with his daily fresh hay. Yes, Rabbit uses the hay for litter while he eats hay right there which is normal for a bunny. Cleaned his water dish holder and of course, the dish is always washed daily (the little custard glass dishes).

Now I am finishing up two batches of my version of keto cornbread chaffles......no cheese. 2 batches gave me 14 chaffles and I eat them with my eggs in the morning. Made with pork rinds even though my recipe calls for almond and coconut flour with the pork rinds. I wanted to cut the carbs as low as possible and this is the way I do it. I put them in the freezer and toast one or two when I want them.

Now I am on my way out to the dumpster..........

You do keto the right way and that means keto all the way.
It was never for me but I admire how you are "all in".
And I still want to try the keto chow. Just haven't gotten around to it.
Your bunny must be so happy and carefree. You appear " all in" on his care too! 🐰

I finished the cornbread flavored chaffles and just put them in the freezer. They smell good, just like cornbread (thanks to the cornbread flavoring). Had chicken thighs for supper and now all the dishes are washed.

It's weird, I know, but on a day when I don't do too much.......computer, watching videos on the television, coloring, keeping my legs elevated...........I feel so down. Then on a day when I get up early and shower early and get to doing things..........even if I work on something physical all day (like housework), I feel happy and my mood is great. That is how I am tonight. Tired but content.

Tomorrow I will make the Keto Chow. Didn't get to it today.
 
This morning my friend who lives downstairs invited me to breakfast at a local restaurant within walking distance. When we walked there (with our walkers) the park was being set up for the farmers' market that will take place every Saturday through out October.

Our breakfast was good and I was able to get scrambled eggs and bacon. The smoke alarm went off right after we got there. Very loud! Scared a little girl who was in the next booth. She kept holding her ears long after it had been turned off.

Then we came back and got her car so that I could go to Price Chopper and get bunny food that I was out of and some food for my son. My friend had to get a eyeglass adjustment as her screw had come out. So she went in the VisionWorks and I stayed in the car. I ran into my cousin and her husband when I came out of the store. A surprise! Good to see them.

After we came home I went back out to the park and got a few pictures. It was really busy. A lot of people there.

Sonny has a doctor's appointment tomorrow, which is usually my errand day and he takes me to do them. So he can't do it. One of my friends in the building who has a car called me yesterday and asked if I would like her to take me while she does her own errands. So that takes care of that problem.

Since the new owners took over our old district manager and substitute manager don't work here anymore. Yay! The assistant manager is now the Property Manager and she has gone up the ladder. Now people are starting to respect her. She is really good and I am happy about this change. Our maintenance man is still here and has 3 other buildings to take care of too. Happy about that too even though I would like to see him only do our building. I hate to ask him to fix something because he is overworked (but probably well paid).

Yesterday at my supper time (around 4) our fire alarm went off. I get Rabbit's carrier out and then wait to see if it really is a fire. The firemen came and walked through the whole building and couldn't find anything. They said it was from the 3rd floor but did not find a fire. I didn't smell anything so guess it wasn't anything. They leave and not ten minutes later it goes off again. This time they came in the rescue vehicle not the fire truck. I don't know what they did but it did not go off again.

It is scary when it goes off because you cannot use the elevator and somehow I have to get Rabbit in the carrier down those stairs with me. I fear I would have to leave him behind if it was a real fire through out the building. Horrible thought for me.
 
Fall is definitely here even though the temps are warm. 70 degrees presently and my air conditioner is on. I took a walk around both parks and the county office building. Not sure how far that is but it is far for me. I stopped and sat for about 45 minutes in the park by the court house....West Park. I needed to get outside. That is one thing, when I lived at my house I always was outside and would go for long walks in the forest. I do miss that but have to make do with what I have to do right now.

Since Sonny had a doctor appointment today, I had to find a different way to do my errands. My friend who lives in my building took me to do them. She did not have her air conditioning on and it was 80 degrees! I was so hot!! But she does not have air conditioning in her apartment either so I guess she is not hot like me. So I didn't mention it but I am sure my face was bright red.

Just as long as I got my son's errands done, I am good. I hate to grocery shop on the 3rd anyway. So I will put that off until Sonny can take me to Walmart. I can always order using Instacart but I really prefer to pick out my own meat and Rabbit's produce. If they would get the handicap ramps on the sidewalks finished I could go to Grand Union. I might try to find a different route to get there. I hate to drive in the street on the busy streets.
 
I think today I will try to get to Grand Union on "Jazzy". If I take a side street it is possible to drive on the street and not the sidewalk if there is no other way. And a side street does not get a lot of traffic. Maybe they put in the new handicap ramps (the small kind that is at the end of the sidewalks) yesterday or last night (they are working at night too). I need cream and the spring mix I bought for Rabbit the other day is already not edible. It goes so fast.

One of the things I really miss is my garden and the wild plants that grew at my house. Sometimes I feel like throwing away all my houseplants and starting over with edible plants that Rabbit likes and can eat. I need to check out if they are indoor friendly. Produce in the stores is really a waste of money unless you have a rabbit that has to eat those foods. It is tasteless. And it does not last more than a day or two.

For myself, I now buy frozen vegetables and they taste way better than the fresh ones. Less work too. One thing I need to find is a way to store frozen vegetables in the freezer so they do not ice up. Especially if you open the bag. Like the larger sizes of cauliflower, broccoli or brussel sprouts. I take out a handful and then twist the end of the bag with a rubber band on it.....and they ice up. Often ones that are brand new are already iced up.

I solved that problem with meat by vacuum packing it. Maybe I need to do that with the vegetables as soon as I get them home. But that's a lot of plastic vacuum pack bags and they are pricey. I will research this and see what my options are.

I'd be interested in your findings Kat, because I always use frozen vegetables and as you say, they're often iced up, even when unopened, and certainly once I've opened them, clipped them closed , and out them back in the freezer.. It's a PITA.. I don't think it affects the taste or vitamins at all.. but they surely shouldn't be like that.. :unsure:
 
My freezer is just the normal size one in a regular refrigerator. My friend downstairs has a small freezer and her apartment is a small studio like mine. I just don't have any space for one but if I got one I'd get one of the small chest freezers because I like them better.

May I ask why you prefer a chest freezer? I find that everything gets lost or stirred up. In an upright freezer I can store everything neatly.

Well, before I moved here I had a chest refrigerator which was quite big and had no freezer. It was 12 volt and ran on solar. I learned that when you open the door the cold air does not go out the door. It stays inside and the air in the room does not warm it up either. It was much more efficient than an upright. Plus they can hold more because there is no wasted space on shelves.

I had baskets in my refrigerator that I could easily find what I was looking for. For added efficiency I kept it in an unheated pantry and during the winter it never turned on and off. Just a constant temperature.
