What are you cooking or baking today?

I made blueberry crumble today and served it still warm from the oven like the recipe recommended.
Not a good idea......it was altogether too gooey. Next time, I'll refrigerate it overnight.....it might solidify a bit.
If it doesn't firm up as much as I want it to, I'll add some tapioca pudding to the ingredients and see if that helps the consistency issue.
But tonight's blueberry crumble was still pretty tasty......all of it got eaten up.
 

I tried to make this cottage cheese, blueberry, oatmeal bake that has been showing up on my social media account for over a month. While it’s not bad, I decided that it was not good enough to be worth the effort. Just my opinion of course. Others may find it a breakfast delight, especially if you like the texture of oatmeal.
 
I made half dozen banana muffins with walnuts and dark chocolate chips. 🐷🐷🐷

The recipe calls for one egg but I used 1T psyllium husks with 4T of water that I let thicken while I was preheating the oven and prepping the other ingredients.

You have to use your own judgment on the amount of water, most recommend 2.5 T of water.
 
My daughter in law is from Paraguay and he’s retired military.

I wanted to cook some of her traditional foods before they return to South America as she’s been here two years and misses home. So I’m making something called Vori Vori which is chicken soup with cornmeal and cheese dumplings.

Its been on mine too. Youre right it wasnt worth the effort. Now if I was a guest I could eat it to be polite.
It wasnt bad but Im on a diet so if Im putting in the effort it has to be better than not bad. :D

I ate the 2nd half this morning for breakfast after reheating it in the toaster oven. It was better, but the consistency and mouth-feel, is still too much like oat meal. As you might have guessed I am not an oatmeal fan.
