Wise philosophy. I have something similar. If it’s high calorie and I don’t like it, I won’t eat it.

Same here. I can only consume so many calories before expansion sets in so Im picky.
I miss the old days when I could bake to my hearts content. (sigh)


I ate the 2nd half this morning for breakfast after reheating it in the toaster oven. It was better, but the consistency and mouth-feel, is still too much like oat meal. As you might have guessed I am not an oatmeal fan.

I like oatmeal. This wasnt like oatmeal. It was weird. I tried it the next day cold and reheated. Still weird. #double ick :D
I made it cause it looked like it might be a low calorie dessert. I have come across a few that work.
Im a first cousin to the Cookie Monster so I need my desserts.
 

Made 125 cocktail size Italian meatballs this morning. I use Beyond Meat burgers, flax eggs, almond milk, but otherwise my recipe is the same as it's always been. Much shorter cooking time though. I do use real (dairy) Parm, but it comes out to less than 1/3 a tsp of cheese per meatball. 🤷‍♀️ No biggie. The first group are out of the oven and the rest are baking now.

They freeze well and taste pretty much the same as the meatballs I made before going plant-based. Bonus - no worries about cross-contamination, sanitizing the kitchen, etc.

Moved onto two batches of seared tofu. Plain for me, taco seasoning for DH. Hanging up my cooking gloves for the day.

My experience with viral recipes is that they ALWAYS look better than they taste. I tried a few early on - maybe 20 years ago, and that was enough. I try recipes recommended by people I know (including SFers) and chefs I trust, but random strangers, "influencers" and Facebook popups? Hard pass.

That is so true. They look so good though. I think Im having dessert withdrawal.
Need to get out the cookbooks. :D
I miss the four food groups. Butter, bacon, cream cheese, and Chocolate.
 
Fettuccini with home smoked ham, onion, spinach, mushrooms, garlic and some serious heat, olive oil. Plenty of freshly shave parmesan. Rabbit food and should there be any room left lemon pound cake.

What did we do before microplane graters? I borrowed in my father's and then SO's shop. I was one of their first customers and now the drawer has perfect inserts and is full. Perfect hostess or no reason gifts.

I love my microplane grater!! Can't live without it. It is perfect for grating fresh parmesan cheese, and I grate a lot of parm. Everything tastes better with a little Parmesan.:giggle:
