I made lemon raspberry bars for Easter dinner tomorrow

Allrecipes has ones that look similar. I need to make some when raspberries are in season. Yum.

Made potato salad, coleslaw, deviled eggs this evening for tomorrow. I bought a couple of little ham steaks to go with those. I have not decided on dessert yet, pineapple trifle, strawberry trifle or something apple.

All this for just me but it will feed me for a few days. Walmart was a zoo this evening about 8 o'clock. Never saw so many folks preparing last minute for Easter.

Here is our turkey dinner. I had turkey slices, stuffing, mashed potatoes with gravy, broccoli with cheese sauce, beets and cranberry sauce.

Your dinner sounds delicious too. I looked up candied carrots cause they sounded good. It doesn’t take long. I will have to try them one day.

Not a thing. I asked my son to stop at our favorite local restaurant on his way home from the mosque. I'll be able to eat three or four times off this vegetable platter. There's a lot more rice than it appears. I'm going to have a Gorton's fish filet with it. This is from the first time I got a platter from there, last year.

There’s a ham in the fridge. Will save it for when my friend is up to coming for dinner. Tonight I’m going to spread the failed corn bread onto a pie pan and make a quiche.

I made a ginormous batch of macaroni salad and a large crockpot of baked beans for today's Easter event at DS's. Almost all gone after the 30 of us hit the food like a swarm of starving locusts!

I made shrimp alfredo for today and it was sooo good. Did it from scratch which is a big deal since I'm not crazy about cooking.

My mother in law must have been sitting on my shoulder yesterday as I made the dressing for the coleslaw. I ate some today and it was perfect just like her. I used the special little ball jar she gave me for dressings.

I always feel so pleased when I use things from her and my mother. The recipes and cooking tips they taught me. I know one thing, I was able to keep a husband and son happy and full!

Up early, as usual.

Made three single serving chicken, dressing, gravy tray bakes for the freezer and a single serving packet of Easter dinner leftovers.

Yesterday I roasted a small beef filet roast, blue cheese au gratins & steamed green beans. For dessert it was strawberry shortcake.

Today will be leftovers from the fridge since there is still meatballs from dinner the other night that will be made into sandwiches with lots of melted mozzarella cheese.

Tonight I’m going to spread the failed corn bread onto a pie pan and make a quiche.

It was great. I really like this quiche; it was even better with this crust. From now on when I make cornbread, I’ll need to make extra for this crust.

After so many Easter weekend goodies, I am hitting the salad hard today!

Today's salad was made up of spinach, purple cabbage, cauliflower, kale, onions, peppers, tomatoes, carrots, and a dressing made of olive oil, apple cider vinegar along with curry powder and pepper.

My Easter dinner - garden salad, lamb chops, baked potato, green beans and red wine. A Migliaccio Napoletano (polenta ricotta cake) for dessert.

I made a loaf of olive pecan bread. This is a quick bread, not a yeast bread.
But because I didn’t have quite enough chopped green olives I added a little chopped dill pickles.
it turned out pretty good.

I did chicken chunks with boneless/skinless thighs along with a side salad. They came out tender & juicy, much better than breasts.

 

[Blessed]

I have a beef filet and some asparagus, if I get up and cook it. Both will go in the air fryer together, works great!!

I also bought a small coconut cake as it is my birthday. Mom always made me a coconut cake for my birthday when I was a kid. I will be having some of that even if I don't eat my dinner.
