Oh I forgot to say I also had sugar free jelly ( Jello).. and seedless grapes....
I had some bread to use up, a block of mozz I hadn't even touched since I bought it awhile back, and had just gotten some good deli ham so it seemed the natural thing to make.Yum!!!!
I've never had frozen rice....either... I always imagined might taste a bit wateryNothing fancy here today. I did clean out my frig freezer and got out some meatballs I made (not purchased, homemade) and hope to make my Hawaiian meatballs. Will see if I get around to it.
I did get around to fried potatoes, pork chop and asparagus last night.
I do have a bag of frozen fried rice, never tried it before but trying to make some room and use some things up so that too I might do next/soon.
Today I haven't had much. Not much worth mentioning anyhow.

that sounds great. I will give it a try but I think I will add a layer of refried beans and cheddar cheese to each layer. I think I would serve with some shredded lettuce and salsa. Thanks for the great idea!I made my version of taco pie - probably not what most think it is. Just something I thought up.
Brown a pound of ground beef and season to taste with salt, red pepper, garlic & onion powder and cumin (add in any combo). When fully browned, add a jar of medium corn & bean salsa, Cook until heated through Line the bottom of an 8 x 8" pan (that was liberally sprayed with non-stick) with corn tortillas. Spoon half the beef mixture over that. Add another layer of tortillas and spoon the rest of the beef mixture over that. Finish off with another layer of tortillas and sprinkle shredded cheese on tip. Bake 30 minutes at 350F.
If I make it again I am going to shed the tortillas so they lay more evenly on the dish. They got dried out on the edges, so were tough.
