that sounds great. I will give it a try but I think I will add a layer of refried beans and cheddar cheese to each layer. I think I would serve with some shredded lettuce and salsa. Thanks for the great idea!

The recipe is very flexible. You can modify it to your taste. I just used what seemed good to me.

I have some spaghetti meat sauce simmering. I also had to go out to run errands this morning a couple of towns over. They have a fish place so I stopped and got some fried fish filets and hushpuppies.

They freeze well so I can have a treat when I want. I would be in trouble if there was a fish place on every corner like @hollydolly has access too.

we're an Island, so fish is one of our staple foods.. and readily available mostly everywhere...

And I am jealous, so very few fish and chip shops. I can go without the chips but that fish is fantastic here. Must be heaven there!
