Bananas, how ripe is too ripe?

Yes, you can freeze bananas......I make breakfast muffins with spice cake mix, bananas, brand cereal or oats, nuts and spices.

I buy bags of frozen banana slices w/blueberries for my morning smoothies.
 

Do you freeze them whole ?..I've never had luck freezing bananas, they go Black on the skin.. which is ok, but go dark and mushy inside
You have to peel them first. I also break them into smaller pieces. You can also dip them in chocolate & stick on nuts before freezing. That's how they sell them at Disneyland.

Peeling bananas prior to freezing is necessary, but chopping them up is not. The peel is virtually impossible to remove from a frozen banana without thawing, but a peeled frozen solid banana is easily cut up with a serrated knife, a lot like cutting up chunks of chocolate. You also can refrigerate bananas to keep them longer. The peels turn black, but the insides ripen more slowly. We do that when we a surplus of ripe bananas and no freezer space.

This is exactly what I do!
 
I don't eat a lot of bananas, but occasionally I make a baked banana dessert. It's ridiculously easy and kids love it, even big ones. 😊

You can bake them in foil as per the instructions, but I bake them in small oven-proof casserole dishes and add walnuts or pecans along with the chocolate chips and mini marshmallows. Bake at 350° for about 10-15 minutes, depending on how soft you like them.

I was determined not to throw away 3 bananas that were in the fridge since about a week ago. Well, in my old age, I've become quite sensitive to the texture and the look of foods. I gag when trying to eat foods that are lumpy or have texture. I kept examining the bananas and would visualize maggots in them as I mashed them. LOL

Do bananas rot in the fridge? In a weeks' time?

My plan was to have made banana bread. I don't buy bananas often cause I hate how they ripe so fast.
Many people will disagree, but they start to taste awful when they have a lot of black spots or large black spots. I never even used them that way for banana bread.

They do seem to darken much faster in the refrigerator.
 
I actually DO make banana bread, and they’re better if they’re super ripe. My problem is I forget to buy the bananas far enough ahead. Banana bread is really easy. My bridge club loves it.
 
If you put the bananas right in the freezer they will brown fast. We use them for smoothies mainly. You can let them thaw or put them in their to add some frosties. :)
 
I am picky about fresh bananas and can’t eat them if they get too ripe. At that point I put them whole unpeeled in the freezer until I have time to make banana bread. They will be mushy but I want them mushed up any for making banana bread.
