I don't eat eggs but tofu. This is a good idea however to cook with tofu in the microwave. I'll give that a try. Thanks.Okay, personal opinion here... to me, they don't taste much like potatoes *but* others in the household like them, so I buy them. They're okay to put in things like stews and soups, but the only way I really like them (the diced) is to fry some in a pan and add a beaten egg over top to scramble together... sometimes spinach, and serve it with toast. Another reason I buy them for the pantry is that I can get the no salt added version and then add the sodium-free seasonings of choice. (that would be onion powder, garlic powder, pepper, and sometimes salt-free Cajun seasoning.)
That's what I usually do also. I'm trying to use the stove top less as summer is on the way. This apartment is 30 years old and I know it's the original AC until. It's a piece of crap and doesn't work great.I didn't know you could still buy canned potatoes but my grocery stores has no name ones. I remember being tasteless. I just cook up a pot of boiled potatoes and eat them over a few days (either re-heated or cold).
I like the Bob's Red Mill instant mashed potatoes.I don't think I've ever seen frozen mashed potatoes, outside the formed kind as in "Tater-Tots."

I've never heard of these. Potatoes, tempura covered and fried, that sounds really good.I keep frozen tempura battered potato fritters in the Freezer.. I cook them in the air fryer, they are very good..

Bagged pizza dough is really good, at least the Trader Joe's one.It's so funny how a thread on here will be so timely: last week, I decided to buy some canned potatoes after not buying any for years. I bought a can and put it in the pantry. Huzz had stopped by the store and bought a small container of mashed potatoes (small because I hate mashed potatoes) and when he pulled it out of the fridge to heat up, discovered he had bought pizza dough by mistake!
So I pulled out that can of potatoes and he liked 'em just fine. I'm gonna buy another can or 2; they're handy to have around. It's true that they don't taste exactly like or as good as the non-canned but they're nice to have just in case. (Like when someone persists in grocery shopping without his reading glasses with him!

That's a good tip. I'm putting the few small yellow potatoes I bought in the fridge. It's 80 degrees in the apartment.A hot tip about using canned veggies. To cut down on the amount of sodium, rinse them before using.
And BTW, yanno how we've been told for years not to store potatoes in the fridge? Well, now the consensus seems to be that there's no harm in doing that. At all!
There is no charge for these tidbits of information and no trees were harmed in obtaining it.
I think I could probably bet money that we don't have candied Yam in a Can , here... lol.. but I'm prepared to be proven wrong..When we have ham slices, I always have candied yams in a can. Just add butter. So good.
I used to love those!Packages of scallops potatoes are handy. I toss the mix and just add the potatoes to my own sauce. Same with soup, I toss in some of those dehydrated ones.
WoW !! I think I can safely say we don't have those in our stores Pappy...Holly. I don’t know if candied is the right term, but these and many varieties are on our grocery shelves.

I'd better pass on that suggestion!And then there are french fries. If you like making a big production out of cooking up potatoes, french fries might be the answer. Imagine having a deep fryer alongside your stove top. It would be pretty versatile too. There's no end to the other things you can deep fry, and you can't tell me this stuff isn't good. Just ask corporate management at McDonald's. Of course, you will probably shave 20 years off your life expectancy.

I never thought much of instant mashed potatoes but the newest mixes actually aren't too bad. And again - convenience! Plus portion control - you don't get tempted to make - and then eat - a huge amount of over-rich mashed potatoes made with lots of butter and cream.
Remy, when you move you might want to consider getting a stove top convection oven. Find one big enough to hold a 9"x13" pan, and you won't miss your full sized oven. Most days I cook for just me, so I don't need to use my big oven. I only use my big oven for braising something like a large pot roast or when I need to use a sheet pan. Everything else goes in the smaller convection oven.I'd better pass on that suggestion!I do enough chips and oven fries but I won't be using my oven anymore for the season. Air fryer? I don't know.
If I ever move and have more counter space, I want to look into one of those counter top toaster oven type devices.
