Some of both I guess. For big meals I clean as I go because I know how quickly it can turn into a mountain of dishes. For smaller meals, I will leave the dishes, but not too many. Keep things manageable.

When I was young and single I used to pile used dishes in the sink until I ran out of plates or cutlery then I would wash them all.

Now I am old and once again single I wash everything in the sink after I have eaten I never leave things overnight because I am going to need them in the morning. Basically I use the same bowl, mug , plate, knife, fork, spoon every day, I just take them straight from the drying rack.

I clean as I go too, most going into the dishwasher and all pots and pans done by hand, sometimes at night I leave dirty dishes but in the mornings I clean the kitchen while I'm waiting for the coffee to brew.

Too trivial an issue to develop a black and white habit over. Sometimes utensils, dishes require a bit of time soaking, sometimes not. Sometimes we are busy, other times not. Sometimes food remains have strong odors, sometimes not. Sometimes we are lazy, unenthusiastic, other times not...

For people that say they “wash/clean as you go” do you actually mean you wash the preparation dishes and then sit down to eat? I saw someone do this.

While prepping food, I put what I can into the dishwasher. The rest get washed after the meal is finished.

With a few exceptions, dishes go into the dishwasher. That's what a dishwasher is for.
