Today is Shrove Tuesday or Pancake Day as it's called in England. How many of you will be eating pancakes today?
Here in Sweden we don't eat pancakes today, actually for some unknown reason we eat thick yellow pea soup followed by pancakes on Thursdays. No self respecting lunch restaurant would not have pea soup and pancakes as part of their Thursday set lunch menu.
Instead on Shrove Tuesday we eat something we call "semla". These are large buns with the top cut off, part of the inside removed and replaced with almond paste, topped with whipped cream and the top replaced on top of the cream and lightly sprinkled with icing sugar. Ours are in the fridge waiting for our afternoon coffee.
