The Starch Solution for losing weight.

Here is a recipe for a “chocolate pudding” made with beans. I know it does not sound like a pudding, but it is actually delicious ! I tried making some.
This lady (Stasia ) chatters and advertises her ebooks, so the actual recipe is about 8 minutes into the video. However, I listened to the advertisement and also got the ebooks, and they have a LOT of good recipes for shakes , beans, and potatoes that go with the SS diet plan.
(I actually used black beans for the pudding because that was what I had handy)

I have not tried making her fiber shake yet, but I subscribed to her YT channel, and there are lots of good videos if you do not want to spend the $10 for the ebooks.
I am defnintely going to be making more of this pudding and also try some of the shakes.

I had my green salad with some of her bean salad dressing, and it is good, and a nice thick salad dressing, and then I had about half of my cup of pudding for dessert.
Saving the rest for bedtime treat.


 
Here is the recipe for the bean pudding. It is simple to make, and is so rich tasting. I didn’t eat anymore last night, so I had a bit more this morning with some banana, and that was really good.
Today is day two of SS diet and I am making a pot of white beans and vegetables soup for today. I still have the gazpacho, and I am having some of that now, too. The soup will be ready later this afternoon.

I am still doing mostly plant-based, but my energy went down a lot; so I added in some non-fat dairy cottage cheese and yogurt, and that seems to have helped.
I am happy with what i am eating, and getting full a lot faster now. Losing weight, but very slowly, which is pretty much what I expected at my age. Plus, I am exercising more now, and building up muscle, which weighs more than fat does, so I am probably exchanging those as I progress.

I have been making the overnight oats and having that for one meal, and it really seems to keep me full and satisfied for hours and hours. I discovered that people make the overnight oats , freeze them, and then make it into ice cream with the Ninja Creami, so today I am trying that for the first time.
I made 2 mango/oatmeal smoothies and 2 chocolate/banana/oatmeal ones, and froze them; so my husband and i can both have one. Today we will have the mango, tomorrow the chocolate, and later today, I will make some fresh strawberry /oats to freeze for the next day. We have lots of berries right now, but they are smaller this year than usual.

This is one of the recipes for oatmeal ice cream in the Ninja Creami that I found on YouTube and it is what we will be trying out today.

I often make overnight oats. My rough recipe, whether for overnight or microwaved oats:

1/4 cup rolled oats
1 Tbsp steel cut oats
1 Tbsp Bob's Red Mill 5 grain hot cereal (mix of whole wheat, rye, barley, oats, triticale and flaxseed meal)
1 tsp chia seeds
1/2 cup fresh or frozen berries mixture (mango chunks would also be great!)
2/3 cup (ish) almond milk
a couple of tablespoons of unsweetened applesauce
ground cinnamon & ground nutmeg

I stir it up in a mason jar and let it get happy for 12-48 hours. Sometimes I eat it cold, others I zap it to take the chill off.

Note: The small amounts of steel cut oats, Bob's hot cereal mix, and chia seeds add a more interesting texture than rolled oats alone.

p.s. I don't have an ice cream maker, but @Happyflowerlady has me considering pulverizing a fairly thick rolled oats and fruit mix in my food processor and freezing it. How bad could it be?

If it turns out well, I might invest in an ice cream maker. Commercially available vegan ice creams tend to be fat heavy, with most relying on coconut cream (very high in saturated fat) so I don't often indulge in them.

If it doesn't turn out well? 🤷‍♀️ No biggie. It'd be easy enough to incorporate some into my overnight oats.
Waste not, want not.

I'll give it a try next time I break out the food processor and report back. Thanks for the inspiration, HFL!

Sounds too good to be true, but I am going to try this easy recipe. Do you just blend it together? Any cooking?

There is no cooking, assuming that you are using canned beans. I might have used a bit more of the cocoa powder than in the recipe, so just add that and the sweetener to your taste. I think the dates add a lot and help thicken it, too. It is so rich that just a little bit is satisfying and takes care of any sweet tooth attack. You will never believe there are beans in this !

The ice cream turned out delicious. You can taste the texture of oats, but it is not unpleasant all all, since lots of ice cream flavors have bits of cookie and such in them.
My husband ate his and declared that it was delicious, too ! Since he is a big meat eater and does not get a lot of veggies and fiber foods, this is a great way for him to have more fiber in his life.

I totally recommend getting a Ninja Creami, or one of the knock-offs that are on the market, and the prices have come down quite a bit because of that.
I have the size that makes a pint of ice cream, which is about perfect for one ice cream lover; but they also make the larger containers that make 24 oz (or somewhere close to that). The larger machines cost more, and the smaller amounts are better if each person is having their own container of ice cream.

However, you can also make the overnight oats into a smoothie ! You would not need anything except your blender for that. I found a book on Amazon for making oat smoothies, and it has a lot of good ideas. If they are cold enough, it would be almost like a milkshake texture.
I use the Red Mill 5 grain mix instead of regular oatmeal, too.

When you culture milk into yogurt or kefir, the lactose is eaten up by the culture bacteria, so you might not have any problem with the yogurt.
It is just plain milk that has the lactose, and if it is raw milk, the enzymes in the milk might make it digestible for you. But the plant based versions would work for the ice cream or smoothies, too.
