What are you cooking or baking today?

For the last few days I've been concentrating on making and freezing dough for Christmas cookie baking - at least a double batch each day.

Cooking hasn't been on my radar. Clearing more freezer room, yes. Cooking, no.

Before abruptly changing to a plant based diet nearly 12 years ago, chicken divan was among my favorite meals. Loved it, as did my family. I missed it enough to take a stab at recreating it using tofu in place of chicken and skipping the cheese. Turned out great.

Well, this week I had a hankering for it, but wasn't up for the hassle so I improvised:
Opened a can of cream of mushroom soup, added a half can of almond milk, and heated it until smooth.
Put some defrosted broccoli, sugar snap peas, summer squash, bell pepper and seared tofu in a frying pan, added 1/2 cup of the soup mix plus about 1/3 cup of brown rice, and voila! Quick, easy vegetables divan.

Bonus - enough soup leftovers to enjoy it a couple more times over the next few days. Which I did! 😋
 

Do you ever make sourdough bread? While visiting our church bazaar yesterday, there was a young lady there selling her homemade sourdough and focaccia breads, and they were so good! But, she said you really have to be dedicated to that sourdough starter in order to keep it going if you're truly going to invest in it.

No we haven’t started sour dough bread. We DO have a sour dough starter kit though and considered it but my husband decided against it. He said it would take a lot more time and effort to make sour dough bread.
 
I pulled out of the freezer some beef & bell peppers to defrost last night. Trying to eat up some things in the freezer to make some room for Thanksgiving left overs. Since we've been trying to take advantage of the good weather this weekend outside to cut down some trees with the a lift, there hasn't been time to cook.

Making a cheese spread to freeze for the holidays.
Cheddar cheese, chopped fine green bell peppers, green onions, and black olives. Add oil and garlic salt.
Spread it on lahvosh or english muffins and put under the broiler to melt.
