What are you cooking or baking today?

Yesterday I made Cauliflower/Red Pepper soup. At the end it gets puréed. Absolutely delicious.

I also made egg salad using my new chopping device.

Today I’ll make a double batch of Lazy Daisy cake. I‘ll give one and a jar of the soup to my friend who is housebound.
 

I'm not cooking today. Ii got a Philly cheese steak sandwich and onion rings delivered.
YUMMY, wish I could have the same! I have to watch what I eat now for health reasons. I am learning to live with it but I am not happy.

I have lost weight and I feel better but I long for the day that I just what I wanted. Guess that's how I got into this boat, I will have to row against the current now.
 
Nutmeg & cloves are from different botanical families. Nutmeg has a mellow flavor compared to cloves which is sharper.

I like cloves in savory recipes, but not in baked goods because I think it overpowers anything else used.
I use freshly ground cloves in sweets very sparingly. Inexpensive cloves stuck in citrus fruits make nice old fashioned holiday displays.
 
The fifteen bean soup is bubbling away and a half dozen banana pecan muffins are in the oven.

Banana Pecan Muffins
Yield 6

2 small ripe bananas
1/3 cup oil or melted butter
1 large egg
1/2 t vanilla extract
1 t cinnamon
1/2 t ground ginger
1/4 t ground cloves
1/4 t ground nutmeg
1 cup Bisquick baking mix
1/2 cup broken pecans

Beat bananas, oil, egg, and spices until smooth stir in baking mix and pecans, divide between six greased muffin cups. Bake at 350f 20-25 minutes, remove from pan and cool on rack.

You can add 1/4 cup of sweetener but I don’t bother.

Big pot of beef vegetable soup. Simmering away, potatoes, carrots, peeled and chopped. Like to let the cabbage get really tender, then I add those. Of course, the onion, garlic, celery, bell pepper is already in with the cabbage. Using ground beef with a tomato base broth. Some for today, rest for servings in the freezer.

I did that yesterday. No bell pepper; used shredded taco beef, canned tomatoes, beef broth and pearl barley. Added a chopped zucchini along with the rest and 1/2 can black beans. Ate a big bowl for supper and one for brunch, 3 containers in the freezer.
 
Today I threw that stupid mistake bread I made into the food processor in 2 batches and made crumbs mixed with garlic powder and salt. Spread it out on parchment on a large sheet pan and baked at 225F for 30 mins, then 220f for about 40 mins.

I will whizz them again with more garlic powder, dried parsley, black pepper and maybe grated parm. cheese.

Should I dry some orange zest to add? Dunno. Would rather lemon but don't have.

Now have a normal loaf baking in the bread machine.
 
Last night I was going to make a baked pasta dish and couldn't find my pasta. I went up to the Dollar Tree which is the closest store. It was already dusk and I don't drive in the dark. The only pasta they had besides elbows was no-boil lasagna noodles which I bought.

I had a bag of shredded parmesan and pepper jack slices but no
ricotta. I substituted blobs of bacon ranch dip for the ricotta and feared nasty results.

It was delicious! But probably not very healthful.

No orange please. It is not a lemon substitute. Next time you have extra lemon slice and dry one.

I use cottage cheese with an egg stirred in to help it set up. Sometimes we just have to wing it and often, it is great!
