What are you cooking or baking today?

I overcooked a couple of pounds of garbanzo beans in the instant pot yesterday evening. Oops. More an annoyance than a tragedy because overcooked garbanzos are perfect for hummus. I separate them into two cup portions and freeze them in quart zipper bags.

I've yet to cook dried garbanzos to perfect al dente consistency. I don't have IP timing difficulty with most dried legumes, grains or quinoa. Just garbanzos, so I keep 6-8 cans on hand for non-hummus use. Have any of you figured them out? I do pre-soak.

Picked up some ingredients for quinoa salad at my produce store yesterday and am out of frozen quinoa, so I'll do a couple of runs of quinoa in the IP for that salad and to have in the freezer. I'll also make the hummus. :cool:
 
Today I'm making Kentucky Hot Brown since it's Derby Day.

Hubby brined a the bone-in/skin-on turkey breast for 10 hours yesterday. We took it out of the brine last night, dried it off & left it sitting on a rack in the fridge. It'll go in the oven shortly to roast. Not sure if I'll do as a casserole or individual sandwiches yet. Side salad to go with it & I'll make Pecan Tassies out of the last of the marinating pecans from when I made bourbon balls at Christmas.
 
Yesterday was Scooby snacks - black bean/chicken/pepper jack taquitos, hot hot wings, jalapeno poppers.

Tonight will be tuna salad and fresh soft pull apart bread sticks. Rabbit food of butter lettuce and fresh garden scallions.
