What are you cooking or baking today?

A recipe I made up and it turned out fairly well - a version of rice pudding, but really a custard base.

1 - 8.5 oz. pkg Ben's basmati Ready Rice (prepared and cooled to RT)
3 eggs (at RT)
3 cups milk (at RT)
1/2 cup granulated sugar
1/2 tsp cinnamon, nutmeg or like spice (I had pumpkin pie spice mix I used)
1 tsp vanilla

Preheat oven to 325F. In large mixing bowl, beat eggs until uniform, add milk and mix well. Add sugar, spice and vanilla and mix well. Fold in rice. Pour into a greased or non-stick treated 9 x 12 inch baking dish. Bake for 20 minutes, then rotate the dish and bake another 20 minutes. Cool to RT before serving.

My DIL called me the other day telling me my grand daughter was sitting staring out the window at the hummingbird feeder I sent her looking all sad.
She asked her why she was sad. Grand Daughter teared up and sobbed "I want to go to Nonnie's house right now and get her to make me a pineapple upside cake!" I now live 15 hours away from her. So now I am thinking of making one since we got a break in the heat we been having. Bless her heart. Heart jerker and heart warmer all in one sentence.
 
Even during the dog days of summer I need something hot.

Tonight I’m making a semi homemade pot of mushroom soup that I will be able to nuke one cup at a time.

Cut up a cantaloupe to scoop and eat.

Later today I will do a quick stir fry to make chicken fajitas. Not sure if I will have it on a low carb tortilla or as a bowl with some rice.

New food on Sunday! 😉🤭😂

Lemon Pudding Cake
 
This is going to sound odd - I made a salmon sandwich for lunch. It was excellent. We had salmon for dinner last night and I didn’t eat all of mine. Saved it and it became the basis of that sandwich. I was thinking of checking how much I paid for it at Costco and compare it to a can of salmon. It might be worth it.
 
That picture made my mouth water and I swooned a little. Went to the recipe and got even more excited. Only my vegan son wouldn't eat it because of the eggs, no one but me likes lemon that much, so I would be eating the whole thing by myself. What a nice fantasy though.

Just an idea....you can make lemon bars with just 2 ingredients.
1 box of angel food cake and 1 can/jar of lemon pie filling or lemon curd (20-22oz)
Mix together, bake and then sprinkle the top w/powdered sugar. Very good and easy.
