What are you cooking or baking today?

A favourite of my kids and my grandkids is peanut butter squares. Any time I visit, they expect me to make them. I hate them. I made some today for an afternoon meeting. I still hate them. They’re easy; that’s the only good thing I can say about them.

I feel you on this... One of my traditional Christmas cookies due to popular demand is snickerdoodles. I don't care for them at all.
 
My comfort food is ridiculously simple and comes down the family from my Great Grandfather. He came from Denmark as an able seaman and ended up homesteading in Washington Territory. In addition to farming he ran a small grocery shop which he built on his homestead. Among the items offered for sale were saltine crackers which came packed loose in large wooden barrels.

W.Wa has a wet climate and over time, the last remaining crackers would absorb moisture until they became too stale to sell. When this happened, G Grandpa would take them to the house for the family (nine kids) to eat. He buttered them lightly and baked them in the oven until they were golden brown and crispy. They were a real treat for everyone and quickly earned the name "Grandpa's Toasted Crackers"

My Mother introduced me to them. Even though we no longer had a cracker barrel I passed them on to my own children. Now my GrandCritters and the Great Grands are munching away on them. 130 years or so later the whole family, including aunts uncles and cousins, eat toasted crackers all because My GGrandfather couldn't stand to throw stale crackers away.

Finally, I made the Thumbprint raspberry cookies I’ve been thinking about. Good thing I only made half the recipe because they’re too sweet for my palate. I have a friend that likes sweet things so I‘ll be giving them to him.

After that I made raspberry squares. I substituted a heavy grain cereal for the rolled oats. I like these even if they’re still a little sweeter than I care for.
 
Made a Kaluha cheesecake for Christmas dessert. It's cooling as we speak.

Going to do make-ahead dough for scones and some for sausage/cheese balls so we'll have something sweet/something savory to nosh on Christmas morning without having to make a full breakfast. We'll get up later than when the g'kids were little, and dinner's gonna be buffet-style around noonish because DSIL has to go to work at 4.
 
Headed out for a few last minute things at the grocery. Today I'll start prepping some of the ingredients so I can put things together tomorrow & get them done. The rib roast is in the fridge & defrosting. I decided to do simple things this year for dinner. Most of the family isn't into fancy food & simple is much more satisfying to me. The fanciest is going to be the hollandaise sauce.

I made a pot roast on Monday & we've been munching on the left overs each day since we're getting ready for Thursday.
