What are you cooking or baking today?

Hubby had boiled quite a few eggs a few days ago. Since he hadn't eaten any he asked for me to make some egg salad. I hadn't made it for a while & it tasted pretty good for a late lunch.

He found a way to boil eggs that allows the shells to come off easy. You boil your water first & then lower the eggs gently into the water. Boil for about 10 minutes & then put them in cold water to stop cooking. I thought they would crack being put in the hot water, but they haven't. I have been pleasantly surprised that this has worked each time we've cooked them like this.

I made tuna salad this evening and boiled the eggs as you said your husband did. They turned out perfect and so easy to take the shells off.
 
Yesterday we went to a UCLA softball game. Ten minutes before leaving the house I realized I needed to quickly pull together a sandwich or go hungry during the game. :eek: (Eating burgers, hot dogs or similar snack bar junk isn't for me.)

Mashed up some chick peas, diced a celery rib, added some pickle relish and a dollop of the light mayo-mustard combo I keep in the fridge, and mixed well.

Spooned some onto lightly toasted whole grain bread, covered it with some little seaweed sheets, added the top bread, and I was good to go!
 
Yesterday’s salad was so good, I’ll be repeating it. Leaf lettuce, strawberries, sliced almonds, orange slices and a few garbanzos all topped with an apple cider and honey dressing.

I have some fast fry beef strips that I’ll tenderize with baking soda first.

For lunch I made scrambled egg sandwiches using the baking soda tip. They were fluffy.

My Grandson's girlfriend sweet Gabi gave me this easy recipe today.
Only takes about 10 minutes or so to prepare.

Dump Cake
Ingredients
1 21 ounce can pie filling
1 15.25 ounce package cake mix
¾ cup butter, melted
2 cups chopped walnuts Optional
.
1) Stir pie filling in a 9x13-inch pan and spread in an even layer.

2) Sprinkle (not mix), dry cake mix evenly over pie filling.
.
3) Drizzle melted butter or put small pats on top of cake mix, making sure minimal dry spots remain.
.
Optional: Sprinkle walnuts over cake mix.
.
4) Bake in the preheated 350 degrees oven about 35 to 40 minutes until golden brown on top.

About 12 servings
Serving Option: Top with ice cream.

I have not made the Dump Cake yet but I was given some that Gabi made.It is very good.

When I get back on Tuesday, I may start a thread on dairy free, gluten free recipes, also I will include the original
recipe if I have that.
 
Today? Oh who knows, my eyes popped open at 3:15 am and refused to stay closed when I tried.
Maybe a cold sandwich is the best as I may be asleep on the sofa by dinnertime

I find it amusing how things we were taught our entire lives were not always right. :ROFLMAO: I just hard boiled and peeled six eggs with your hubby's method, @Lilac . Worked like a dream, so thank you (and him!) All I'd ever heard was that they *must* be started in cold water... guess that one's been debunked! I let them sit at room temp for 15-20 minutes first to lessen the chance of cracking... just one did, but pretty sure it had already had a hairline crack in it.

What I'm cooking or baking today... gonna be meatloaf, mashed potatoes, and corn tonight.

I’ve always done my eggs this way.
