What kinds of salads do you make?

Well spotted. This is a Caprese salad which is simply tomato and Mozzarella with basil. It takes about ten minutes and looks a million dollars!

Like you Ronni, salads are a favourite of ours, as is fish. It all helps reduce the amount of meat that we eat and it gives a good balance to our daily diet.

This salmon salad combines Romaine lettuce with tomatoes and cucumbers, add a few olives for a delicious Mediterranean style salad.
The Caprese salad is so quick and easy to make and perfect when you have freshly grown basil . Add a touch of olive oil and that’s it. That looks so good.
 

I enjoy Shopska salad. It’s the Bulgarian goto salad for all meals. Chopped cucumbers, tomatoes, add int some onion, bell pepper, wine vinegar an olive oil. Feel free to add carrots, left over steamed veggies from yesterday, etc. Top it off with feta cheese.

I enjoy it because I am not a big fan of leaves, whether tobacco or lettuce leaves.
 
I often make Greek salads using romaine (and another lettuce if I have it), diced cucumber, tomatoes, bell pepper, minced red onion (that's been soaked to remove some of the bite), halved kalamata olives, cut up marinated artichoke hearts, kidney or garbanzo beans, dressing that's heavy on the vinegar and a few shakes of oregano. Like @Jules, I sometimes add a chopped cold baked potato (nearly always have those in my fridge).

Also make my own version of the "Jennifer Aniston salad" (which she says she didn't invent, nor did she eat it every single day while taping Friends, but said she often eats salads for lunch that include some whole grains).

Anyway, my version starts with a quinoa or brown rice base, garbanzo beans, diced cukes, diced tomatoes, diced bell pepper, thawed frozen peas, thawed TJ frozen roasted corn, finely chopped mint and Italian flat leaf parsley, green onions, lemon juice, a little (emphasis on little) olive oil and a smidge of salt.

Instead of the olive oil I sometimes mix homemade hummus with the lemon juice and a little water and stir that in as a dressing.

On both of the above, just before eating I sometimes add fresh blueberries, strawberries, grapes or other fruit. I cruise my produce drawers and add in whatever seems like it might be good additions.
 
Well, egg salad, tater salad, macaroni salad. I am not a fan of lettuce, so have been known to mix add ons into a sorta salad..like cucumbers, chick peas, cherry tomatoes, hard boiled eggs. I have made me a big veggie salad and made it a meal

I make a similar salad but call it 'clean out the fridge' salad - "spring salad mix", left over cooked green beans and "end of cheese chunks" or grated cheese, leftover meat/fish, dressed with Sesame Dressing/Marinade (my current favourite)
 
Should add that for the past six months I've been making Waldorf salads regularly. A delicious way to eat a good mix of fruit. I add every type of fruit in my fridge plus plus celery, chopped walnuts and finely diced dried cranberries. A little lemon juice, low fat plain yogurt and low fat sour cream plus some cinnamon and a tiny bit of sugar/stevia combo for the dressing. No mayo.
 
Salads! I eat a lot of salads and most of them aren’t side dishes; they are whole meals.

That was the first kind of salad we learned to make in Home Ec in grade 7.
And to this day, I make it regularly, with some extra add ons’ sometimes.
 
Delish.com and EatingWell.com have wonderful salad recipes, if you want to try something a little bit different.
Years ago, I came across a recipe that is very easy, fresh, and makes a great summer salad recipe. It is very simple and was very well appreciated by guests.
Cucumber finely sliced, plain whole milk yoghurt, fresh sliced mint, 1/2 a lemon juice, and salt and pepper to taste.
