What's for dinner ( or lunch )

2 fried eggs, one slice whole wheat, seeded bread.
I love so called breakfast for dinner. It is simple, quick and easy!! It is a good thing for those that do not want to spend time in the kitchen. I don't mind the cooking part but I hate the clean up part. Eggs are high in protein and filling. Who does not like toast. I usually bake a pound of bacon for the week, I use it if a I am having a breakfast dinner. Handy for making BLTs.

I do the same with bacon…..so handy to get a few strips.
 
I did not make the pepper steak but I have smothered steak with onions cooking now. I have my Mom's waterless cookware. I got the steak started, then added some onions and beef broth to make a gravy. I will attempt to get in there later to make mashed potatoes. The instant ones do not work for me. I have had them at many fast food places and they are good. Don't understand why mine turn out like wallpaper paste. I will just stick to homemade. Mind you I do not like skin on mashed potatoes, they have to be peeled. I use butter, half and half and sour cream, it makes for wonderful dish of mashed potatoes.
 
Tonight is a new recipe for us, and I'm hoping some of you foodies here can give suggestions for a side dish. :) It's Salmon in Puff Pastry (like a Wellington)... and it sounds good, but I have no idea what to serve with it. There's already fresh spinach with the salmon in the pastry, so I wouldn't do another green veggie most likely. I don't have salad ingredients and we won't be going out today, so that wouldn't work. Any ideas? :giggle:

Asparagus, green but so what? Yellow squash?

Salmon en croute is what it's called here..usually served with Asparagus or sprouting Broccoli ..
