Ooh! That sounds good.Farfalle pasta and chick peas in tomato sauce with fresh garlic, fresh basil leaves, kalamata olives and anchovies. Grated parm over top.
I have many times tried to like quinoa. I made a salad w/olives, tomatoes, green onions.....oil and lemon juice.Friday, I made a batch of brown rice in the instant pot followed by a batch of quinoa. (What the heck - as long as I had it out and was going to have to wash it, might as well take advantage, right?).
I put roughly one cup portions in sandwich bags, then those in gallon freezer Ziplocs. They're excellent defrosted and very convenient to have on hand.
Most of the quinoa went into a large batch of my version of the Jennifer Aniston salad. I don't dress the whole thing because DH & I choose our dressings when we're ready to eat some. A tablespoon of homemade hummus makes a good dressing, especially if it's thinned with another dressing.
The JA salad is great by itself or over a green salad.
I love that stuff, especially in summer. I often add a little canned Sockeye Salmon to mine. Tastes good (if you like salmon that is).Just made some boiled eggs. First thing tomorrow going to make a macaroni salad. I am going to add shrimp to it. Makes a nice small quick meal
