What's for dinner ( or lunch )

Returned from a Railroad Museum's open house event. Once the rains were over this morning they rushed to set up the tents again and put things out. Lots of food vendors, especially near the carnival grounds.

I was good though. Waited to get home where I had peanut butter toast and some blueberries.
 
Friday, I made a batch of brown rice in the instant pot followed by a batch of quinoa. (What the heck - as long as I had it out and was going to have to wash it, might as well take advantage, right?).

I put roughly one cup portions in sandwich bags, then those in gallon freezer Ziplocs. They're excellent defrosted and very convenient to have on hand.

Most of the quinoa went into a large batch of my version of the Jennifer Aniston salad. I don't dress the whole thing because DH & I choose our dressings when we're ready to eat some. A tablespoon of homemade hummus makes a good dressing, especially if it's thinned with another dressing.

The JA salad is great by itself or over a green salad.

I have many times tried to like quinoa. I made a salad w/olives, tomatoes, green onions.....oil and lemon juice.
I just can't get much flavor out of it. It's so bland tasting. I want to like it though!! I realize how healthy it is.
 
Bangers! I found one of the few remaining butcher shops in the area that actually makes its own sausages - bangers, Italian, kielbasa, Andeloui, etc. I don’t know if they would pass the test in the UK, but they do tickle my taste buds.
 
We had warmed beigels for brunch and for dinner we shall have air fried chicken. I usually buy frozen veg but, bought fresh broccolli, sweetheart cabbage and green beans this week so, will probably have that with the chicken. :)
 
For dinner I had one stuffed mushroom (from my favorite diner). I made steamed broccoli and instant mashed potatoes to go with that. My instant mashed taste very much like the real deal because I add ICBINB spray, cream cheese, as well as spices and herbs to taste.
