What's for dinner ( or lunch )

Decided on a chilli con carne tonight with rice and a garlic baguette for us. I don't want to do our usual Sunday roast on a summer day. This way I can cook it quickly this morning and free up the day for other things.
 
Dinner or as we call it.....Teatime....lol, consisted of a fish supper from the chippy....wee drop salt, vinegar and broon (brown) sauce. It hit the spot I'm pleased to say. Identical to this

Nothing better! Except for me it must be ketchup with chips.
 

As a thank you for yesterdays DIY project lunch today will be BBQ'ed ribs & whatever sides my neighbors wife prepares. The toilet hold down plate DIY project was a success. Before anchoring the savings was enough for them to chose a new sticky back tile to replace the worn looking original tile. All in all it took about 5 hours to complete the project.

Am about to put together a big mixed salad (assorted greens, tomatoes from the garden, plus diced celery, cucumber, nectarine and mango) to get me through 2-3 meals.

Depending what I'm hungry for, just before eating I add these types of ingredients to kick the salad up a few notches:

Chick peas, kalamata olives, minced red onion, a little feta and red wine vinegar dressing would make it Greek-ish.
Pinto beans, salsa, avocado, defrosted TJ roasted corn, and a salsa based dressing push it in a Mexican direction.
Dry broken ramen noodles, slivered almonds, pickled ginger slices, canned mandarin orange, and a soy sauce based dressing to send it in an Asian direction.

Salads are so wonderfully malleable!
