What's for dinner ( or lunch )

I took a 12-lb pork shoulder out of the fridge and injected it with a solution containing a bit of salt, sugar, Worcestershire sauce, chicken broth. Smeared with with Dijon mustard (not too thick) and a dry rub containing the usual suspects -- salt, cracked pepper, garlic and onion powder, paprika, and smoked paprika. Parked it back in the fridge, uncovered, for 12 hours until I smoke that puppy on my Traeger pellet smoker.

Damage control to be reported tomorrow.
Pulled it out of the smoker at 5 AM, about a 12-hour, 275 deg. extravaganza. Samples indicate that the injection process is a winner. (Worcestershire sauce is a staple in my kitchen.)

Extra added bonus - only about 3 lbs. of oak pellets were consumed.
 

Went to Tesco this morning. Couldn't get 'Trex' which is a vegetable fat that Mrs.L uses for baking. What I did get was a rolled breast of lamb. This is great when stuffed with breadcrumbs and herbs and then roasted.
Nothing too exciting today - maybe a toasted sandwich for lunch - we never eat much at lunch time - and burgers and chips for dinner.
funny you should mention the rolled breast of lamb, I looked at one yesterday, because it's a long time since I had one, reason being they are so tough to eat, regardless of how I cook it... in the end decided against it for that reason...

I got lamb steaks instead..

tell me your secret if you're managing to get the rolled breast tender..
 

we have a canned spam like substance here, but it's called Bacon grill...Identical to spam, but once cooked it tastes like bacon...then there's Pork luncheon meat.. as well

It was not bad at all , granted you would not eat that every week but tasted pretty good . Going to Walmart in an hour as that is how long it takes my coffee to kick in and going to buy ginger root which a Gentleman here told me about but will pick up a couple more cans of Korean SPAM .

Both meals were delicious, old fashioned comfort food.
 
Lunch today was mic'ing a frozen Trader Joe's Chicken Burrito Bowl. Always pick up a package when at their store. A great example of simple, inexpensive ($3.49), food I enjoy most.

We get 5 Tyson's Country Fried Steaks ($9, $1.80 per steak), a large 4 lb. bag of Hash Browns for (5 meals, $9), a 2 pack with 8 biscuits per can of Grands Biscuits (8 meals, $5) and a can of Libby's Sausage Gravy (1 meal, $2).

So for the two of us, $3.60 each if we eat two steaks $1.80 if we eat 2, 90¢ each for Hash Browns, 62¢ for 2 biscuits and $1 each for half a can of Sausage Gravy. So that adds up to $6.12 each (2 Steaks) or $4.32 (1 Steak), with no sale tax.

At Denny's it's $15.99 for 2 Steaks and $9.99 for 1 with Gravy, and we usually get double Hash Browns, Garlic Toast. (You can however, get Mashed Potatoes and Eggs instead.) Plus tax and gas, but I don't have to cook or clean up. And please pardon me if my math skills are still weak... So that adds up to $31.98 (for 2, w/2 Steaks) and ($19.98 for 2, w/1 Steak), plus tax and gas. :coffee:

If I had to guess about it, aka, generic SPAM cooked in Bacon Grease. But I bet if you like fried SPAM, you would like it. I used to put a little Bacon Grease in Spaghetti Sauce to give bacon flavoring.
I dunno, it has the same texture as Spam... but tastes like smoked bacon

here Mac & Cheese is usually a whole meal in itself....:)
 
I wish I could get a decent black pudding here. The best one I've had came from a butcher in Hope in Derbyshire. A bit far to go, but younger daughter lives in Sheffield, so I can get some if I'm visiting her.
Occasionally I buy from a Scottish butcher in Dundee if I'm buying a few traditonally Scottish items, . it's worth it to me and is shipped very fast...

When I was growing up, some restaurants served a small amount of mac & cheese as a side dish. It was an option, like: do you want potatoes, rice or macaroni and cheese with your dinner?

My mom never made mac & cheese. I didn't have it as an entree until I was older and various roommates made it for dinner.
 
Just finished mic'ing then eating half a Trader Joe's 16oz package of frozen broccoli florets plus mayo, salt, and whole milk.
