What's for dinner ( or lunch )

I cooked a corned beef yesterday. The son was/is supposed to come by, most of it will go home with him. I will keep enough for a couple of Rueben's. I have been craving a good sandwich but no way for me to eat a big brisket. They are also his favorite,

I had some leftover Chinese, and my usual breakfast. I had a pound of burger and a pound of sausage out and used part of each to make a bolognese for the next few days. I HOPE to make some meatballs out of the rest. If I don't get to it tomorrow, I'm either going to have to brown both or thrown them back in the freezer.

I don't know what it is but my ambition is really lacking these days. I think may be as we still have winter here coming back at times.. We will get one occasional nice day and them bam again. And gloomy days, lower temps again, more stuff on the ground... Today was nice but now we are to go backwards again.
 
I had made a spaghetti sauce yesterday with both pork sausage and ground beef. I went for a spicy version this time. I had a big plate of it for a lunch and added a piece of garlic toast. I ended up stuffed and almost fell asleep but managed to push through and get some things done. Haven't eaten since but might do the same thing tonight.. But will try to limit the portion...

It was just SO good though and I was hungry!

I was hoping to get some meatballs made up but never got around to it so put the rest of the unused ground beef and sausage into the freezer. I still have some leftover Chinese but I'm not very happy with how it was this time so I'm probably not going to finish it. I've tried but it's just not the place it used to be and the sauce is overkill and there is just no way to eliminate the sauce. I'm probably going to end up dumping it all, what a waste, unless there is a bigger shrimp in the one meal yet, I might save that from it. This was my fave place, I'm extremely disappointed.

Probably be a LONG time before I do any takeout again from anywhere. It's constantly disappointing these days.

But my sauce is good so I'm good for a bit so long as I don't overindulge :love:
 
Been a heckuva week. Details not needed, just a lot of things I did not expect to handle that changed my days and interfered with what I thought those days would be.

Yesterday, finally, a much needed break with nothing unexpected and I planned on doing absolutely nothing if I could help it. Well deserved I figured.

However I did clean out my frig which I do fairly often but it wasn't required of me so didn't feel like a chore. I cooked as well. And FELT like it so also not a chore. First day of the week I could do as I liked when I felt like it.

I have just a bit of what I feel my kickas* spaghetti sauce to use up today but yesterday finally made up the meatballs I've been wanting to make for some time now. I haven't done anything with them yet and may freeze them but do have plans for them. I took a bit of the sausage as the ratio of ground beef to sausage I do are not even and threw together a sausage pasta that I now have enough of that for a few days... It has spicy sausage, parm, cheddar, all sorts of good stuff in it, garlic of course...

And the meatballs are made for another day and a plan.

Almost forgot I also made up a lot of servings of cream of wheat for the week. I don't typically do that for breakfast and maybe it was my week but occasionally I like it with slices of good buttered toast, sugar in the cream of wheat and milk. It's a comfort food from years back I guess and after the week it was, it just sounded good... Plus I need to get eggs and my waffles are also out. And I do have a loaf of Italian bread I need to get after... So it works and puts off a grocery order. Using what I have that sounds good.

Anyhow, cooking WHEN I have time and feel like it calms me. It was a good day. I did those things and watched a whole lot of YT, caught up by messaging several friends, and late night watched some Netflix.

The rest of the week as I said was kind of unplanned hectic.
 
Today I peeled and cooked a total of 9 pounds of veggies, cooked and then froze them...

I didn't have any of that for dinner... instead I had Fish pie.. which consisted of Salmon, Hake, Smoked Haddock , in a parsely & cream sauce, with a potato & cheese crispy toppiing
