Our 4 year old grandson came on Saturday, then Sunday got busy, so cooking plans were scuttled until yesterday evening.

Turned out DH had eaten the dried apricots since I'd last checked, so I subbed half a can of pineapple chunks plus some chopped dates, both of which tasted great. Bonus: I used some of the unsweetened juice from the canned chunks in place of the water.

I put in 2 cups of stir fry veggies plus a cup of peas. Followed everything else to the letter with tofu instead of chicken.

Only complaint DH had was that he wished I'd made it with more sauce - so not really a complaint at all. I imagine we'll have the leftovers for today's lunch.

I like curry but never tried making it because of having no instincts for balancing ingredients and seasonings, so your recipe is greatly appreciated.

Since DH & I don't eat meat, I'll sub tofu for the chicken, but have all other ingredients and spices on hand, including dried apricots and cranberries, so I'll use some of both.

If you have any helpful hints for a curry-making newbie, I'd love to know them.

I question the dried fruit in the curry recipe, I haven't ever seen it in Indian curries. Dried fruit is sometimes used in biryanis, which are rice dishes with or w/out meat, but no sauce.

I can't say whether this is an "authentic" Indian curry, but it sure was delish!
I'm not a purist when it comes to food though - I'm more the type to rearrange recipes to suit my taste and use what I've got on hand.

This is a recipe from the West Coast of India, Kerala: Kerala Fish Curry With Coconut Milk
This part of India frequently uses coconut in their recipes but I won't try this one as I grew up near Lake Erie and saw too many dead fish floating.
 
Today was my second attempt at making pumpkin bread. Unlike this past Saturday, in which the results were literally a hot mess, this loaf came out pretty good. Last time, it came out of the bread maker's baking unit in pieces, was burned in spots (long story) but the edible parts tasted very good. Tonight's loaf could have been sweeter. I used raw sugar so my son could eat some. He does not consume artificial sweeteners or white sugar. I'll have to adjust the recipe for a sweeter loaf next time. If I just make it for myself, I'll use Xylitol like I did for the first loaf.

Yesterday I made a dish that has great northern beans, diced canned tomatoes, chopped onions/garlic simmered on top of the stove & then added spinach to it to wilt. You then top it with lots of mozzarella & then melted under the broiler. It's a side dish that we eat as a main.

Today I think I'll make some chili & cornbread. The weather right no is 19F with a real feel of 5F, but it's supposed to get to 24F today. It's going to stay in the teens at night through Wednesday so it's time for some comfort food.

You had me until the "lots of mozzarella" ingredient, but it seems it would be good even without the cheese. What do you think?
