Fish curry w coconut milkI like curry but never tried making it because of having no instincts for balancing ingredients and seasonings, so your recipe is greatly appreciated.
Since DH & I don't eat meat, I'll sub tofu for the chicken, but have all other ingredients and spices on hand, including dried apricots and cranberries, so I'll use some of both.
If you have any helpful hints for a curry-making newbie, I'd love to know them.

I question the dried fruit in the curry recipe, I haven't ever seen it in Indian curries. Dried fruit is sometimes used in biryanis, which are rice dishes with or w/out meat, but no sauce.

You had me until the "lots of mozzarella" ingredient, but it seems it would be good even without the cheese. What do you think?Yesterday I made a dish that has great northern beans, diced canned tomatoes, chopped onions/garlic simmered on top of the stove & then added spinach to it to wilt. You then top it with lots of mozzarella & then melted under the broiler. It's a side dish that we eat as a main.
Today I think I'll make some chili & cornbread. The weather right no is 19F with a real feel of 5F, but it's supposed to get to 24F today. It's going to stay in the teens at night through Wednesday so it's time for some comfort food.
