Eating a plant-based diet.

It should not be an all or none conversation when we talk about health. Plants are earth friendly…biome friendly….budget friendly. I will always use dairy and eggs. Always eat some meat. But it is a wish of mine to incorporate more plants in my diet…so I do.
Good points! Some of my best friends are carnivores..I don't see them that often ...(Sorry, just kidding about that,)
I don't judge people by what they eat or don't eat .

I don't judge people by what they eat or don't eat .
Nor do I. What works for me may not work for them. Also, what works for me now wouldn't have appealed during earlier stages of my life.

Do you eat a fair amount of tofu, VM?
 
At Thanksgiving, I usually get asked but what do you eat?
So I answer by saying imagine a huge table with a turkey, stuffing, tons of vegetables some healthy casseroles, bread, salad..now imagine that table without the turkey...
I'm not a vegetarian, but if I went to a Thanksgiving dinner and there was no turkey on the table, I woudn't miss it. I would be completely satisfied with the other foods you named off.

I enjoy vegetables, and always have these on hand: broccoli, potatoes, Brussels sprouts, corn, green beans yellow squash, and Zucchini. Except for the green beans, the others I named are fresh or frozen. I seldom have red meat because it often disagrees with my digestion, but I'll have a burger if I'm out with other people once in awhile.

My weight would start slipping if I only had vegetables every day, and it would be hard getting enough protein, since I don't do well if I have too much dairy and cheese.

Just this week, I had blood work and saw the doctor. Cholesterol and other tests were fine.

I don't eat red meat except once or twice a month an organic burger. Also occasionally chicken. I love tofu, eat it with veggies mostly. And I use almond milk. (which is no good for coffee, so I use a splash of half and half in that/)

I do, however, eat sugar, in the form of cookies or ice cream or cake. I am working on reducing that. What bothers me the most tho is the large amount of cheese I consume.

I learned how to cook tofu from a former member of this forum who left several years ago (TreeGuy). He was a vegan as well as a chef who trained at France's L'école des Coups Durs.

I was hopeless with tofu until he explained how to press and sear it. What I particularly like about tofu is that it's a great replacement for chicken in recipes I loved before I stopped eating meat. My Hawaiian chicken, chicken divan and other recipes from days of yore lend themselves well to tofu replacement.

Chicken itself adds surprisingly little flavor without vegetables, fruit, garlic, spices, salt or pepper.

I could learn a lot of cooking stuff from you! So are you more a vegetarian now or slip into carnivore mode every now and then?

I'm pretty true to plant-based vegetarian. I eat zero beef, pork, chicken or the like. I'll have a little cheese now and then - once or twice a month, at most. Some butter in cookies over the holidays. I might have eggs once a month, ditto a piece of fish if dining out and other options don't appeal.

My husband and I throw several big holiday parties between TG and New Years. I make 20-24 pizzas during each party, plus we serve some of the (literally) 5,000 cookies I bake during that time.

I don't like the texture or flavor of non-dairy cheeses, so I make salad pizzas for myself and some others who like them. I do serve some non-dairy cheese pizzas for those who want them, the rest of the pizzas have traditional cheeses and other toppings.

I have to free up my calendar around the holidays.
 
When I say zero of those meats, there is a caveat. If I'm traveling to Spain or Italy and there's a special local salami or other meat-based food, I'll have a few bites of it. My food plan is meant to be healthy, not a punishing sentence.

Overall, I miss meat far less than I ever would have imagined.
