Eating a plant-based diet.

When I was vegan I was a big fan of Isa Moskowitz's cookbooks. The one that got me started was, "Vegan Cupcakes Take Over the World!" Great recipes.

I think I had more of her stuff than my other vegan cookbooks combined. Used to make a tofu omelet from her "Vegan Brunch" that was really good.

And I still make her, "Sexy Low-fat Vanilla Cupcakes," on the rare occasion I feel like baking.

I went from veganism to pescatarianism to an omnivore diet and have been back here for more than a decade now. I still have some of Isa's books, though.

There are a few recipes I still enjoy. I tweaked a recipe from, "The Ultimate Uncheese Cookbook," for some nice Vegan Mac & Cheese.

They are good, the Sexy Low-fats, but there are chocolate ones that are better. ;)

You must have tons collected recipes at this point. :) Ooo, are you familiar with Boca 'Chik'n' Patties? Their spicy ones are delish. :)
 

That said, I am wary of how much ”vegan meat” is processed and how many non-whole ingredients are added.
I agree. I use vegan "ground beef" (Beyond or Impossible) to make Italian meatballs and the bratwursts for sausage, peppers and onions. I personally eat about 2 pounds of it per year. If I could find less processed versions that tasted good, I'd buy them in a minute.

Perhaps @VeggieMan could make some recommendations - he's been at this a lot longer than I have.

Try Morningstar Farm products...they make excellent meatballs, too
