Reflections of My Life

The chicken I cooked came out perfect! I made a chicken salad and used the same recipe for the dressing as I did for the coleslaw. It is basically Chosen mayonnaise with sugar-free pickle juice and seasonings (garlic and onion powder and dill) whisked together in the bowl first then add the cubed chicken. Mmmmmm! Outstanding! I used to love the chicken salad from Aldi's but after I started living the keto life it was way too sweet (fructose corn syrup I think) and I could not swallow it. This home made one is a keeper.
 

I also like to add a little dill to my chicken salad. Just a touch is good in scrambled eggs with cheese, onion and bell pepper. I think you can eat all of those on keto.
I love dill! Though I tend to get "into" a certain herb and will use it for a time on everything possible. I have been making scrambled eggs with onions but didn't think to add the dill......thank you! Tomorrow I will do it! Rabbit loves fresh dill too! I used to grow it in my garden so he was used to it.

If you have them, mushrooms are also good. I just saute the the veggies on low for a little then add the eggs. My current favorite herb is thyme, just a little and it can transform a dish!!

I like mushrooms and peppers in my scrambled eggs! Kind of an omelet but easier. Adds fiber.
DH was not a fan of dill but I have been adding a little here and there and he hasn't noticed. 👩‍🍳
 
The bananas in the stores lately are mostly green. If they aren't green they are almost brown. Good for banana bread but not for a certain bunny boy's morning treat! I bought the green ones and notice he does not seem so eager to eat it like usual. They have a solid, sticky feel to them. But they don't turn brown on the cut end after a day in the refrigerator. Even now, he is laying down by his hay pile and I see a chunk of the banana I gave him is still on his blanket. He will get to it but more slowly.
 
The bone broth I made yesterday from the whole chicken came out perfect. I am planning on drinking a cup a day. Preventative. I am reminded of how long ago people would be given nourishing broths, soups and homemade custards or puddings including eggs when they were recovering from various conditions. Protein and fat. It will heal and promote good health. So I will be buying a whole chicken when I am almost out of the bone broth so I can make more.
 
Today I expect to have a good day. Finishing my 2nd cup of coffee then going out to the dumpster. On my way back, I will scope out the laundry room to see how busy it is. With only 4 washers, it can be too busy. Most people, me included, use 2 washers at a time. If I get it done early I will have a better day. Funny how a little thing like laundry can affect you.

I plan out my chores like a game with a plan. Get everything done by certain time and the rest of the day is mine. I can do whatever I choose. I know I won't have this free time so much after Jeff moves in upstairs. He will be needing me. He will be at my door. I can't get everything he needs at once but a bed, a table and a chair is a priority as well as a vacuum cleaner. I think this could be a good thing for him and me. After he has moved in I will know more about what he needs.
 
Are you still a bookworm? I had to give it up when my migraines started, they affect my vision. My husband and son got frustrated when I chose to curl up with a good book. They wanted my attention at all times, LOL. The library was my happy spot. My Mom and I used to go, they had all the magazines we could read for free. If there were recipes we like, we would just make a copy for a nickel.
We have a wonderful public library!!

I'm a fan of dill, too. I like it in potato salad and sprinkled on fresh cucumber spears w/ a little of the Japanese vinegar. (not too sour)

I'm so excited about Jeff moving in! Will he be one floor above you? This could be a very, very good thing for both of you. When is he coming?
 
I agree @RadishRose, when you have a special needs child it makes you feel better, knowing you can keep an eye on him. I would plan to be cooking enough to keep him in healthy foods. Take his grocery budget to be able to feed him. I find it easier to cook for many than for one . The second advantage is that you will spend more time together, I would be thrilled to have my son come over for dinner everyday!!

Still, to this day, my son goes straight to the fridge to see what is available and he does not have special needs and also is a very good cook. We all know there are things are mother made that were the best. I think it takes them back to the happy place they had growing up.
 
I still don't know for certain he has been accepted. These places do a check on anyone applying. Still waiting for that. But I think he will be accepted. He will be moving into the apartment on the 3rd floor on the front corner. It is kind of private next to the stairs on one side and one lady on the other side. I think he will get along with her. She has a Long Island accent and he will like that because his grandparents lived there and he loved hearing them talk.
 
Oh yes!! A corner apartment is the best in my opinion. I hope he will have windows on both sides. I always tried to pick corner apartments, just one shared wall was perfect. I also preferred up stairs, just felt safer, I had a balcony that no one could reach. If I had to go back into an apartment I would go back to the last one we had.

No windows or balcony anyone could reach. Laundry room and pool right behind the building. Everything close but no noise. I would get up early Saturday morning and have the whole laundry room to myself. I could wash and dry everything in about 1 1/2 hours.

The apartment was spacious with plenty of cabinets in the kitchen, seperate bath and dressing area. Hubs could be in the shower and I would be in the dressing area doing my hair and makeup. Huge closet!!

I stay in this big old house because what I pay is cheaper that a one bedroom apartment costs these days. I have no mortgage, only insurance and property taxes which will be going down once I hit 65 in one month. Of course there is the back yard which I need for the dogs. Still, I could be a happy camper in that complex. Shoot, you and your son could live with me and there would be plenty of room!!

Yes, I have always been a reader. Even if watching television I will have a book or my Kindle in my lap. It is one of my favorite things to do. I buy at least one new book for my kindle every month. And the library is directly across the street from me. I am planning on going there today.

Kat..I'm always amazed at the size of your studio apartment. Here in the UK a studio apartment would not have a separate kitchen as you have.. everything is always in one small room apart from a very tiny bathroom..

Kat..I'm always amazed at the size of your studio apartment. Here in the UK a studio apartment would not have a separate kitchen as you have.. everything is always in one small room apart from a very tiny bathroom..

Oh goodness, I couldn't live in that. Or afford those rents. My rent is subsidized so is very low.
 
it's shameful .. IMO...
Rents are like that in NYC but not here where I live. If my apartment was not subsidized or if I did not have low income it would rent for about $650. I watch a YouTube channel, Cash Jordan, and he is in NYC and shows apartments and city news events and I can never believe how much the rents are. If I could not live here I would be living in a van or an RV somewhere. Just way out of my range. I wouldn't want to give up my apartment though because I love it.
