Senior forums........ what's your favorite soup?

I used to have a problem using a whole bunch of celery until I added cream of celery soup to my collection of easy inexpensive recipes.

Sweat minced celery and onion in butter until translucent, add a good sprinkle of flour and stir to create a roux, add chicken stock*, season to taste with salt, pepper, and cayenne. At serving time reheat the soup and add a splash of heavy cream, sour cream, or a spoon of grated parmesan or romano cheese. If you prefer a smooth textured soup process the soup with an immersion blender or in small batches using a conventional blender.

Sometimes I freeze the basic soup mixture in pints and use it as the starting point for another type of soup.

*If I don't have homemade stock I use a packet of GOYA bouillon for every pint of water.

I like my cheaters cream of mushroom.

1 can Campbells Cream of Mushroom pureed in blender with 3/4 can of half and half. Sauté fresh mushrooms (halved or very coarse cut depending on size) in butter. Add soup, a splash of sherry and heat thru.

A splash of sherry will improve any canned soup as will a little stilton as suggested by hollydolly. A good bleu will do as well.
 
If one considers crab cioppino to be a soup it would be that, however the crab must be fresh dungeness crab. I'd consider it more of a stew though because one often doesn't eat all of the broth/sauce.

Baring that my favorite would be a very thick, rich lentil soup. I've only had a few that fit that category and I've loved all of them.
 
I make my own soups. My favorites are chicken corn chowder and Japanese yam, garlic, and potato soup. Japanese yams are sweet and taste like chestnuts. They are excellent in soup of any kind. I love my soups and make homemade every few days. 🤗
 
I love bean soup, any kind will do. I loved Campbells tomato soup but it is full of gluten. I just tried Progresso tomato with roasted peppers. No gluten and though you can hardly find the peppers the flavor is outstanding.
I make and freeze a lot of tomato soup in the summer from the tomatoes that I grow but sometimes I just want the convivence of opening a can and having soup in minutes.
 
I remembered another favorite - 16 bean soup that begins with a packet of Goya 16 Bean Soup Mix. Dried beans so it means an afternoon of cooking but well worth it. Lovely with southern cornbread (unsweetened).
 
Almost any cream of something. The thicker, the better. Tomato is a list topper too. Recently had a bowl of butternut squash soup and it was delicious.
Oh yes, me , too, Paps, a bowl of tomato soup with a grilled cheese sandwich!

A favourite of mine as a young child, and still a favourite of mine after all these years.
 
Got to agree with Furryanimal, Onion soup. But not any old onion soup. Julia Child's recipe. I made it like Julia said to. It seemed like a lot of work. But damn, did it taste good. Now, when I taste onion soup, I can instantly tell you how it was made, and if it measurers up to Julia Child's soup.
I have to tell about my little brother, he always called tomato soup, "soup with nothing in it".
