What are you cooking or baking today?

Yesterday I was busy in the kitchen. I used up by big zucchini in bread & wrapped it up for the freezer for over winter. I also made a large batch of Chipotle BBQ sauce, but added to much peppers. Hubby likes it, but I need to make a smaller amount for me with less pepper.

@hearlady, you made me hungry for venison the other day. For dinner I used venison burger in a new meatloaf recipe. Very simple with green pepper, onion, garlic, BBQ sauce, ketchup, egg, saltine, salt & pepper. Came out pretty good, so I have another recipe to put into meatloaf rotation.

Today, it will be left over meatloaf sandwiches.
 
Tonight at least some of my kids and family will be here for dinner.

Planning to make spring rolls. More precisely, I'll prep all the fixing for spring rolls and everyone will assemble their own throughout the meal. We make them according to individual tastes and dietary preferences. (Most of us eat at least two, sometimes three.)

They're super fun, super delicious, usually leave enough leftovers for DH & me to make more tomorrow and the next day, plus 95% of the work is in the prep (very little last minute work) so I'm not stuck in the kitchen when they're here, and finally, it's cold food on a warm day. I'll only use the stove to make the peanut and chili sauces early in the day. Win-win-win-win-win!

Just made a shrimp stir fry. I used frozen snow peas from our garden. They were mushy and some were stringy. I should have put them in at the end and maybe they would have been better. Those and snap peas are much better fresh.
Any suggestions?
 
Did you blanch the snap peas before you froze them? I've haven't ever done snap peas, but I have green beans. I think the one time I did that I blanched them too long & they were thicker than I think they should have been. They were mushy & stringy too. This year I took the green beans I got out of the garden & put them in the freeze dryer. I didn't feel like canning them as I'm the only one that will eat them like that. Hubby had too many mushy veggies growing up, but he likes the fresh ones cooked.
 
The tropical storm that blew through yesterday put the hubs and I in the mood for soup, so this morning I made a big pot of vegetable soup. It leans more toward a French than Italian broth, and is chock full of fresh and frozen vegetables. It's guilt free - no oil and low sodium. To eat it as a meal, we just add some canned garbanzos or other beans to our bowls. Without the extra beans it works well as a between meal snack.

We love soup! Never mind that it will be in the low 90s again in a couple of days, we'll eagerly plow through it.
 
Made Cheeseburger-Bacon Sloppy Joes for the second time. I'm happy with the way the recipe came out again. Definitely another way to make sloppy joes.
 
Picked some fresh jalapeno peppers out of the garden & I halved them cleaning out the seeds & ribs. Inside I sprinkled garlic salt & then filled with cream cheese wrapping them with bacon. Probably the last peppers out of the garden for the year.
 
Cool weather today with a high in the mid 70s so I'm ok with turning on the oven. As it happens I'm out of DGS's favorite lunch, baked ziti, and was planning to make some anyway.

Already prepped tomato sauce is in the freezer, and ricotta and other cheeses in the fridge, so it'll be easy to throw together and bake later today, then will freeze it in small sections.
 
Yesterday, I braised a beef brisket in the oven with herbs, Worchestershire sauce & beef brothH & had it with gravy & fries. While I was cooking that, Hubby made a large batch of chicken salad. That will be for lunch/dinner today.
 
You can tell it’s fall; I’ve started making soup again for DH’s lunch. There was a rare sale on cauliflower so that’s his soup. It’s ‘Cream of Cauliflower’ made with skim milk, so is healthy, and I leave out the cup of grated cheddar. In the 70s & 80s, Harrowsmith was our source for gourmet down-to-earth recipes.
 
Roasted some chicken thighs with olive oil & chicken seasoning in the oven. On the same sheet pan, I tossed some cubed red potatoes with olive oil, whole grain mustard with salt/pepper at the same time. Steamed green beans rounded it out. Today was a nice cool day & this seemed to fit the bill for something filling after working in the yard in the morning.
