At the moment, I'm just watching mindless stuff on YouTube to give my brains and emotions a break. What should have been a routine visit to my daughter/grandgirls this AM turned into something totally different. I didn't leave til after 4pm; we were both mentally, emotionally and (me) physically wiped out. :(:unsure:o_O

My favorite stuff to watch. Mindless, not mind expanding, not anything that teaches me anything, not anything that expects me to actually think. Murder shows are my favorites :rolleyes:

There are a million excuses why I never finished college. Yanno, like I don't do numbers, am bad at science...but the real reason is that I would have to have paid money and then have been expected to think besides.

sorry to hear that CS...I've done the same in the past after dealing with some heavy stuff..... hope all is well enough to be resolved..

Making vegetarian meatballs with Beyond Beef today. Trying to figure out how to also make some that are both vegan and GF, but it appears that would be a very tall order indeed.
I had a friend who was vegan and gluten free. I thought it would be too limiting, but she figured it out. She made fantastic meals with lots of variety. You can do it!
 
Nothing exciting but I did go out for the second day in a row. I went to the store last night for dog food and treats. For me, some red grapes. Today, to the vet to pick up heartworm/flea meds for the pups, ouch! I don't know why I am surprised it is always expensive. Stopped on the way back and finally got the car inspection done.

At that point, I was tired and came home. Wanted to go to another grocery for a meat sale. I will do that tomorrow. I have been trying to do better about getting out of the house more than once a week. I am on a roll!
 
Well I'd just got the washing in the machine when I got a call from my friend at the farm down the lane to tell me one of her Ewes had given birth last night... so I quickly drove over and got the cutest picture ever.. just a few hours old.. 🥰

That is a cute picture. You take very nice photos HD. The marking on mama's nose reminds me of silhouette plants sprouting out of the ground (or is that dirt?) :D

Problem is that I'm serving 70s style food (think lots of dairy) to a crowd that includes omnivores, GF, keto eaters, vegetarians, vegans, and GF vegans. While I'll make some of the same foods in different ways to cover everyone, trying to achieve 70s flavors and textures for something like Italian meatballs without using (real) parmesan or bread crumbs, is pure folly. It's hard enough using non-meat, believe me.

I sincerely appreciate your vote of confidence though. ❤️

@StarSong Maybe vegan GF meatballs are just too much to ask of yourself. Why not just make something else? There were plenty of vegetarian/vegan recipes in the 70s. Do you have a copy of Moosewood or Diet for a Small Planet?

I wonder if the Beyond Burger, can be prepared in a way that it is soft and easy to chew and to swallow; would you have some input about that? (I don't mean for your recipes; I mean that I and my dear family member both have eating difficulties, and I would like to try that.)

Good ideas! And those were great cookbooks, too.
I was thinking that, in order to make it into 70's type food, the vegetarian chili could be served as "sloppy joe's." They were popular then, weren't they?

Early A.M., did some digital purging and organizing in both my Mac photos and Google photos. This afternoon I finally finished going through the papers in my file cabinet and junk mail for the shredder bags that we have to take to the shredder man's truck. Now the trick is to sync up with him when he's in town and when my son is off early enough for us to take them. If we would keep up with our shredding, this wouldn't be an issue. :sneaky:
I had to make a lot of extra room in the freezer because I knew my son was bringing home large items for me from Costco, including more spring rolls @hollydolly 😃 Then he told me he wished I wouldn't keep the freezer so full because he wants to be able to put something in there sometimes. Well voila...I worked magic in that freezer, which is part of an old, medium sized G.E. refrigerator, and made enough room for his 1/2 gallon of special milk.

The rest of the evening will be spent catching up on social networking, games, T.V. Also must call my honorary daughter and thank her for the custom masks she made for me. Update: Called her and we had such a nice chat that we were on the phone for an hour and a half!

There will be 5 full on vegans coming, 2 Gluten Free vegans, 3 vegetarians (including DH & me), 2 ketos, and the rest omnivores. A few of us are flexible eaters when it comes to party fare (like DH & me) so they're included in their most inclusive categories.

So 12 "special diet" folks and 28 omnivores.

The idea is a 70s theme, featuring that era's music, decor and foods we frequently ate at 70s Appetizer & Dessert parties. (I never heard of quinoa until well after 2000). Tofu and hummus weren't on my radar either. Potato salad and chili were/are delish, but picnic fare.

Even so, I'll be offering hummus alongside 70s traditional dips: Lipton onion soup mix dip and Knorr spinach dip, both made with dairy sour cream for the omnivores as well as vegan sour creams for the vegans. Fritos and potato chips are GF & vegan, as are the crudites I'll also be serving.

Hot artichoke dip - I'll try making some vegan, not sure how that will turn out. Also will offer full dairy version. It's already GF.
Vegan spring rolls are on the menu and cover all but GF and ketos. Same with stuffed mushrooms.
Pigs in a blanket - omnivores only
Cold shrimp with cocktail sauce - omnis & keto
Mini calzones - vegetarian and omnis
Stuffed celery sticks - full dairy and non dairy versions will cover everyone.

Waldorf salad in both vegan and dairy versions - all but keto.
Hawaiian skewers with chicken, peaches and pineapple will also be available with tofu instead of chicken, so they cover all.

Will make some vegan GF cookies and probably take a stab at vegan carrot cake if there's time (can't manage that in a GF version).
All other desserts (amaretto mousse, carrot cake & lemon bars) will work for everyone but keto and vegans.

Everything will be marked as dairy, vegan, GF, etc.

I bought some light up floral crowns for little girls who might not have anything 70s to wear, and round glasses (John Lennon style) for boys and girls.

Should be a hoot. If I know my guests (and I do) as @Jules suggested, they'll figure out how to fill themselves up and have a great time.
