What are you cooking or baking today?

Started to make a lemon drizzle cake mix that I must have bought on sale, because it’s not something I’d usually buy. After getting fed up with having to put together the cardboard cake pan, I threw it in the garbage. I still don’t know why I ever bought it.

Instead I made a lemon pie.
 
@GAlady posted that today is National Double Cheeseburger day. So today when we got home from errands, I made double cheese smashburger on the griddle pan. I let the cheddar melt until it started to run off the burger until it "fried" on the skillet & plopped them on grilled buns. I topped mine off with mayo, red onion & dill slices.
 
Cherry Jello. I spotted it and a couple of others while tidying up the cupboard. After having some for dessert, I put it in the microwave and softened it. Poured it into a smaller bowl and it looks nice again.
 
Made some schnitzels after I defrosted a small boneless pork loin. I cut it in thick slices & then pounded them out thin. Seasoned with salt/pepper, dipped in an egg wash & then pressed them in seasoned bread crumbs. Fried them until golden brown & served them with braised red cabbage & rye bread. I cheated on the cabbage by using a jar from Aldi's.
 
I had some ricotta cheese that would shortly be heading south so I made 20 pizza doughs on Friday. Last night I used 15 of them to make about 60 mini calzones. When I ran out of ricotta I made pizza with the remaining doughs.

DD and DS (and their fams) came over for dinner and took home some leftovers. Now they've both got a couple of meals in their fridges or freezers, as do DH & I. All to avoid wasting 4 lbs of leftover ricotta. Win-win!
 
Since I am following a low-carb WOE, I am learning to make bread from foods like almond flour, flax meal, and other foods not usually associated with baked goods.
I ordered some chickpea flour, coconut flour, (from Amazon), and I already have the almond , flax and psyllium husks. Today, I made a loaf of lentil bread, which also has some of the almond and flax meals in it. I added some seeds, chia, sunflower, pumpkin, and sesame as well. We are just tasting it now, and it is pretty good. It should go fine along with soup or even make a sandwich.

I bought a whole chicken yesterday & now trying to figure out what I want to do with it. Was thinking of either cutting it up & doing Amish fried chicken (home-made shake-n-bake, but better) or cut-in half & roast in pan making a creamy mustard sauce out of the drippings. Both are easy & fairly quick.

No appointments today, so I have time to cook.
 
I took some hamburger/mince from the freezer. Have not decided what I will do with it yet. Meatloaf, tacos are at the top of the list. I had spaghetti last week. Probably taco meat, I can always use that for tacos, tostados, taco salad!!
