What are you cooking or baking today?

Me and my Sue used to loving working together in the kitchen. Now that she is gone, I have very little urging to cook anything that takes more than putting something on a cookie sheet and baking it for 30 minutes. 3/4s of everything I cook now the dogs eat.
 

My stepson, wife and baby are coming for dinner so I’m making a beef roast, potatoes and veggies in my crockpot. I haven’t seen them in 6 months because they are in another state for 18 months for pilot training. I’m really excited. It’s hot so didn’t want to use the oven even though I have AC. Plus it’s better in the crockpot.

Bread.
I cooked some hamburger meat yesterday with "hidden vegetables" for the boy (GS) coming this week. I froze it in portions for various meals. I chop very fine mushroom, carrot, onion, and red bell pepper. You can't see it. I can't taste it but we'll see if he outsmarts me.
 
I pulled together a large enough salad yesterday to cover today's lunch. With summer fruits starting to hit my produce stores, I'll shop today or tomorrow with a Waldorf-style fruit salad in mind, but with strawberries, blueberries, nectarines and mango chunks taking center stage. Grapes aren't in season, so forget those. However, I'll grab some apples if they look good and will also throw in chopped walnuts, celery and diced dried cranberries.
 
Made a Greek Salad. I only do this when all the vegetables are in-season. The first Greek salad I ever had 50+ years was made with potatoes and I’ve always done this.

Too bad that restaurant closed. It had a great Cauliflower salad made with florets and a creamy dressing, probably a sour cream base. I’ve never found anything similar.

This is my version prior to me adding the green pepper.

@Jules, I also love Greek salads and make them often. Well, Greek-ish. I'm creative based on what I have on hand.

Have you tried putting in fresh berries, for a little pizzazz? They add a whole new dimension.

Interesting idea. I use whatever fresh fruit, sometime frozen blueberries if I remember to defrost, in all my salads.

Fresh strawberries go particularly well with Greek salad ingredients. I also put in cut up marinated artichoke hearts if I have an open jar in the fridge.
